Roasted Tomato Garlic Toast

I’m not going to bore you to death over my love for tomatoes (the perfect food!), but just look at this.

Summer is coming, and while I’m forever a die-hard lover of fresh tomatoes marinated in oil with garlic and basil and red onion (how can you not make your entire life about that), this is something else. Something special. Something that wows, impresses and blows ya straight down to the floor and back.

Shall we peepeth?

The simple meter is off the rails and the flavor meter is orbital.

We’ll just get it all violently tossed in a small baking dish and cover with oil. About a half cup, I’d say.

Into a 300 degree oven for 90 minutes aaaannnndddd…

Honeychild.

Right out of the oven it sizzles and pops and there’s nothing in the world like this show stopping biz.

And don’t even get me started about how it smells in your kitchen right now.

Let the garlic rest for a little bit, then squeeze the cloves out and back into the tomatoes. A gentle stir, a bit of spreading on good toast, a sprinkling of fresh basil and nutty parmesan.

This is living, you guys.

An afternoon snack, a party appetizer, a little breakfast nibble. It works. Like all the dang time it works.

YOU HAVE TO.

Ingredients

  • 1 pint cherry tomatoes
  • 2 garlic heads, tips sliced off
  • 1/2 cup extra virgin olive oil
  • Small bundle of thyme and oregano stems
  • Coarse salt and freshly ground pepper
  • Sliced toast
  • Fresh basil and parmesan cheese for garnish

Instructions

  1. Preheat your oven to 300.
  2. In a small baking dish, add the tomatoes, two heads of garlic (exposed cloves facing up), the oil, herbs and a pinch of salt and pepper. Gently stir so that the oil covers the garlic and herbs. Roast for an hour and a half, until the tomatoes are bursting and tender, and the garlic is perfectly browned.
  3. Remove the garlic and let it rest about ten minutes, then squeeze the cloves out and back into the tomatoes. Give it one more stir. Remove the woody stems from the herbs.
  4. Spoon the tomato garlic mix onto your best toasted bread. Garnish with basil and parmesan and enjoy your life.
  5. Serve four - six.

I love the idea of roasting the entire head of garlic right alongside the tomatoes; it seems like such an effortless way to get that deep, caramelized flavor. I’m definitely going to try this for my next dinner party since it looks like the perfect low-maintenance appetizer.

Just made this for brunch today and the garlic really mellows out nicely after roasting. I added a sprinkle of red pepper flakes for a little heat, which worked surprisingly well with the tomatoes. Have you ever tried this with cherry tomatoes instead of Roma?

I made this last weekend with tomatoes from the farmer's market and the slow-roasted garlic was absolutely dreamy. I added a little fresh basil on top and served it with a simple arugula salad — it disappeared so fast my husband asked for seconds before I even sat down. Definitely going into our summer rotation!

This looks like a simple yet flavorful recipe that's perfect for making the most of fresh summer tomatoes. Roasting them with garlic must bring out an amazing depth of flavor, and serving them on toast makes for a great appetizer or light meal. Thanks for sharing!

This looks absolutely delicious! I usually go for the fresh tomato and basil marinade you mentioned, but roasting them adds a depth I hadn't considered for a toast. It’s perfect for these warmer days ahead. I’m planning to try this weekend, maybe with a side of something light. Speaking of relaxing evenings, sometimes I just need a quick mental break between recipes. That’s when I pull up arrows go online game to unwind before dinner. That 90-minute slow roast in the oven sounds totally worth the wait, especially with two whole heads of garlic in the mix! I can practically smell that amazing olive oil and herb combination just from reading your description. Definitely making this as soon as cherry tomatoes are at their peak this summer 🍅✨

Those 90 minutes in a 300-degree oven are totally worth it for that sizzle alone! Squeezing the roasted garlic back into those jammy tomatoes sounds like pure heaven on good crusty bread. 🍅✨

This roasted tomato garlic toast sounds absolutely mouth-watering! I love how you emphasize the difference between fresh and roasted tomatoes for summer. The simplicity of the recipe is perfect for a quick appetizer when you're hosting friends. Speaking of relaxation, sometimes after a long session of strategy at Arrow Out Game, the last thing you feel like making is a complex meal. But this looks easy enough to enjoy without much stress. Do you have any tips for keeping the garlic from burning since it tends to go dark quickly? Thanks for sharing this summer staple, it definitely inspires me to try something new tonight.

Great concept! I’ve spent way too long debating whether my player needs more handles or a better mid-range game. The recipe explicitly calls for roasting the tomatoes and exposed garlic cloves at 300 degrees for ninety minutes until they are tender and browned. While the baking dish finishes that long roast, you can casually open this homepage to keep the kitchen atmosphere relaxed while the slow baking happens. That steady temperature is the actual reason the flavors develop that rich, lingering quality.
  28. poppy pods August 1, 2026 at 9:03 pm #
Fresh poppy pods are the seed pods that are harvested from the poppy flower. Poppies are known for their beautiful flowers, but it’s their seed pods that are of the most value. These pods contain the seeds for the next crop and, when dried, they are frequently used in floral arrangements and other decorative crafts. By using fresh poppy pods, you can take your art to the next level as it gives a natural and pleasant look to your creations.

The line about tomatoes being “the perfect food” really hit home for me—I’ve been known to ruin a good meal by just eating a bowl of them with salt. But this roasted version with garlic sounds like the kind of thing that would make me actually put down the fresh marinade for a minute. Definitely trying this before summer officially kicks in. ltx

The roasted garlic spread on that toast sounds like the perfect bridge between fresh summer tomatoes and something heartier — I love how you described it as “something special” that still lets the tomatoes shine. I’m definitely trying this with a thick slice of sourdough and a glass of chilled white wine the second the weather warms up. Also, your line about the tomatoes being “the perfect food” is exactly how I feel every August.

The tip about keeping the tomatoes on the vine while roasting is a smart detail—the pan juices and garlic sound like they do most of the work here. I also liked the reminder to season the ricotta itself instead of relying only on the topping.
