Air Fryer Zucchini Fries

Quick and easy, baby! (<–this is why punctuation matters.)

Have you ever air fried zucchini? And made them into little sticks? Little fries? Listen, I’ve been making these weekly for the last month or so and we are all massive fans. And yes I’m calling them fries but we won’t kid ourselves. They’re health sticks. And they’re actually not that stiff, the way fries are. But the flavors are delish and the air fryer gives them at almost-roastedness that’s swoon worthy.

Are you game?

We’ll just cut up some zucchini (wait! I have a tip. If you can, find zucchini on the slender side. I’ve been playing with different sizes and find the super thick ones to not work quite as well.) into little sticks. Not too thin or they’ll shrivel up. But you know, like fries.

We’ll toss with olive oil, garlic and onion powder, smoked paprika and dried Italian seasoning (omit this if you’d like to keep it just spices! I’ve done both and honestly, just as good.) Salt and pepper, too. You know.

Into the air fryer it goes for ten minutes at 400. It might feel a little crowded, but we’ll shake the pan and they’ll all have roasting coverage. That made more sense in my head. Go another five minutes and see how they look. You want a little char all over.

So good! I put a little freshly grated parmesan on it, but you can skip that if you want. The kids love this. I love it. Aaron loves it. (minus the cheese.) Everyone loves it! Serve with anything really. We’ve had them with burgers, with chicken sams, it all works.

Ingredients

  • 2 medium zucchini, ends trimmed and cut into sticks
  • 3-4 Tbs. Olive oil
  • 1 Tbs. Garlic powder
  • 1 Tbs. Onion powder
  • 1 Tbs. Smoked paprika
  • 1 Tbs. Dried Italian seasoning
  • 1 good pinch coarse salt
  • A few good grinds of pepper
  • Freshly grated parmesan for garnish (optional)

Instructions

  1. In a large bowl, whisk together the oil and spices. Tip the sliced zucchini into the mix and toss with your hands.
  2. Preheat your air fryer for four minutes, then pour the zucchini “fries” into the base and onto the tray. Arrange them as best you can so they’re not clumped. Air fry at 400 for 10 minutes. Shake the pan and go another five minutes. Take a look at them. Charred enough? Go another five minutes if needed. Get them perfect!
  3. Serve with grated parmesan (or as is!) and inhale immediately.
