Cajun Shrimp Guacamole (& a Giveaway!)

(to be sung to the tune of Oklahoma! that exclamation point is a part of the song title. i’m not just overly zealous this morning. but also, I am.)

 Guuuaaaaacamole where the avocado is the staaaaaar.

Where the pit comes out, and there’s no doubt

That the fleshy mash will take you faaaaar.

And when we saaaaaay, Yum! Yes give it to me, yaaaaaaay!

We’re only saying, You’re tasting fine, guacamole!

So incredibly sorry to put you guys through that.

But guess what!

My awesome friend Gaby just released a spickidy spankidy brand new cookbook COMPLETELY dedicated to avocados.

Like, totally and entirely all about avocados.

As in, nothing but avocados.

I have looked through every single page of this book approximately 17,634 times and my mouth wants to ride off with it on horseback into the sunset, forever. Just my mouth though. The rest of my body has some things it needs to get done here at home.

Yeah, that image ruined my life too.

Anyway, I HAVE IMPORTANT NEWS. I have a copy of this avocado-licious cookbook, and I’m absolutely dying for you to have one too. Alls yer gotsta do is answer a super crazy important question for me. So easy.

I made her Cajun Shrimp Guacamole yesterday, and I’m telling you, my entire body is still absolutely numb.

Cajun Shrimp Guacamole:

(from Absolutely Avocados)

What it took for 1 person. Just kidding! 1 stingy person:

(fine, 4):

* 4 Tbs. butter
* 1 Tbs. Cajun seasoning
* 1 pound medium (or extra-large!) shrimp, peeled and deveined
* 3 Hass avocados
* 1/2 cup chopped red bell pepper
* 1/2 cup thinly sliced scallions
* 1/4 cup chopped yellow onion
* zest of 1 lemon
* 1 Tbs (or more to your liking) fresh lemon juice
* coarse salt and freshly ground pepper

Melt half the butter in a large sauté pan over medium-high. Add 1/2 Tbs. of the Cajun seasoning to the butter. Stir it all in. Let it bloom and fall in love. Add half the shrimp and sear on one side for 2 minutes. Flip and sear another minute or so. Season with salt and pepper. Remove the shrimp from the pan and set aside.

Add the remaining butter and Cajun seasoning. Bloom for a second, then add the remaining shrimp. Sear her up, you know the drill. Set shrimp aside.

Half each avocado and remove the pit. Scoop out the flesh into a big bowl. Add the red bells, scallion, onions, lemon zest and juice, and a pinch of salt and pepper. Mash it all together with your fork, until it’s smooth, but still good and chunky. Taste it. BIGGIDY.

Add salt and pepper and more lemon juice to your liking.

Serve with the Cajun shrimp!

    I tried making an avocado-banana ice cream the other day. It failed. As I was pouring in just a TEASPOON of vanilla extract, I didn't realize that the one that I always used has changed the bottle from the way they used to be. Ended up pouring too much too fast and probably a tablespoon ended up in my blender :( I'm sure the ice cream would've tasted awesome if it wasn't for that mishap.

    Although I love avocados, I haven't tried it in any non-food related experiments. I have had it in a chocolate mousse and that was different, yet tasty. I've seen this cookbook featured on several sites and I'm dying to get my hands on a copy! I buy at least 1, if not 2 or 3 avocados every week! Love them.

    Oh my god - not kidding - i did an avocado mask on my hair last night! and then i wrapped a plastic grocery bag around my head for half an hour. There will be at least one avocado in my fridge at any given time. Avocados - how i love thee!!

    Chilled Avocado Soup!! So good when it's 187 degrees outside & you can't imagine having to chew.. or digest. Sometimes I throw in some fresh corn kernels & grilled shrimp if it's cool enough to masticate. YUM! (In the interest of disclosure: it's not actually ever 187 degrees here. And by here I mean Earth. You get the point...)

    Oh I loooove avocados, so I have to enter this!!! Although I have to say the only 'crazy' thing I have done with avocado, aside from eating way too much of it, is to use it on my face. I also make pita pizzas using avocado for sauce (woaaah, crazy right? *Sigh* not really) Also I have to just add: I LOVE YOUR BLOG!!!!     This is for the cookbook entry!! Avo~Rita's (a boozy way to drink avocados) 1.5 oz 1800 Silver tequila 0.75 oz Cointreau 1.5 oz lime juice 1.5 oz agave nectar Half a ripe avocado 2-3 sprigs of cilantro Kosher salt / celery salt, for rim * Lime wedge, for garnish Kosher / Celery Salt Rim: In a small bowl, mix 1 teaspoon of celery salt with 4 Tablespoons Kosher salt. Mix well. To rim the glass, wet outside of Margarita glass with lime wedge and dip into salt mixture. Set the glass aside. In a mixing glass, muddle the avocado with the lime juice and agave nectar. Add the 1800 tequila and Cointreau. Top with ice and shake vigorously. Strain into ice-filled, salt-rimmed glass. Garnish with lime wedge and serve. Yummy!!

    I guess I'm kind of an avocado purist, because I haven't really used them in any super special way. I do, however, use avocado in any place where mayonnaise would be used: sandwich spreads, chicken salad... Oh! And I've tried the avocado-as-pasta-sauce thing. Interesting.

    The most untraditional thing I've done with them is include them in a smoothie, but that isn't really all that strange. I'd much rather eat them in a salad, sandwich, wrap or as a topping though.

    My grandmother lives in Brazil and has two huge avocado trees in her backyard. Last time I was visiting, she handed me a blender full of warm avocado puree right before I hopped in the shower. Most decadent skin and hair treatment I've ever experienced! Thanks for the giveaway!!

    I would have to say that I don't really experiment much with avocados outside of food... mostly because unless avocados are on super sale, I rather eat my expense then rub it on my face or hair. However, I did just use mashed up avocados to liven up my chicken salad. Does that count? ;)

    I use avocados in combination with chocolate alllll the time. Chocolate pudding, chocolate mousse, chocolate ice cream, French silk pie...don't knock it till you try it. They're so friggin' creamy!

    After cutting avocados for salad or guacamole, I rub the avocado oil on my hands into my hands and onto my dry elbows! Works every time!

    I honestly haven't tried avocado in any 'weird' way before - they're perfectly fine in food! Avocado milkshakes sound bizarre but are really good!

    Avocado Martini! INGREDIENTS 2 oz vodka 1/2 oz dry vermouth 1/2 cup ripe pulp from a Hass avocado 2 tbsp cajeta or dulce de leche 2 tbsp sweetened condensed milk 1/4 cup milk TO PREPARE Pour all of the ingredients into a blender and puree until smooth. Pour into a cocktail shaker with ice. Shake it and strain into chilled martini glasses.

    Holy Moly that looks good! Since I follow a low carb diet most of the time, this is right up my alley! I probably wouldn't even miss the tortilla chips. I HAVE used them on my face, and also in sugar free chocolate truffles which were amazing! I could eat avocados all day long and never get sick of them - I'm surprised nobody has dedicated an entire cookbook to them sooner! It's about time! Can't wait to check this one out. Also your photos....just....wow!

    Hiya! Found your blog through Pinterest....you are very talented and hilarious! Just wanted to drop a quick note to a fellow lover of all things with avocados...Did you know: if you pop that little stem off and it's green, the flesh inside that avocado is perfect. Any sign of brown on the bellybutton, it's crap. Sometimes squeezing them you can tell, but if you're investing cash at the grocery store for these gems, pop open their bellybuttons first! :)

    When I was pregnant, I sliced up an avocado and fried it. It was the most disgusting thing I've ever done. I see "fried avocados" on menus now, and it makes me puke in my mouth a little.
