Air Fryer Honey Mustard Chicken Thighs

Another Air Fryer recipe! This is who I am now.

Who knew chicken thighs could be so glorious in an air fryer? (besides every single one of you.) This is the thing, I needed honey mustard. I needed char. I needed next to no mess. Enter, this bad boy. (<–sorry I said it like that.)

We’re going to trim about 5 chicken thighs and get them deliriously coated with olive oil, Dijon mustard, honey, lemon juice, garlic cloves and rosemary. Straight insanity. And you can marinate this is as long as your lil’ heart desires.

Hey-oh! Air fried. 400 for 7 minutes. Flip and go another 7. Flip and go 5 more. You’ll need that full amount a) to get the thighs cooked through and b) that color! We gotta have that soul-giving char.

For the potatoes, use anything you love. I had a bag of baby dutch, so I quartered them and violently tossed them with oil, garlic powder, salt and fresh rosemary. Simple simple, pigeons.

Stop it. (but don’t) That chicken is perfection. The flavors are comforting, but not at all overwhelming. The potatoes are rustic and exactly what you need in this life. You’ll cry.

Can barely hold it together.

Serve with a salad and enjoy your life.

Air Fryer Honey Mustard Chicken Thighs

Ingredients

  • 5 boneless, skinless chicken thighs (excess fat trimmed)
  • 2 Tbs. Extra virgin olive oil
  • 2 Tbs. Dijon mustard
  • 1 Tbs. Freshly chopped rosemary
  • 1 Tbs. Honey
  • 1/2 lemon, juiced
  • 5 cloves garlic, grated
  • Coarse salt
  • For the potatoes:
  • 24 oz baby dutch potatoes, quartered
  • 2 Tbs. Extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp freshly chopped rosemary
  • Coarse salt

Instructions

  1. In a medium bowl, combine the olive oil, mustard, rosemary, honey, lemon juice, grated garlic and a pinch of salt. Whisk to combine. Add the chicken thighs and gently toss to coat. Let this marinate as long as you want, up to overnight.
  2. Spray the air fryer basket with cooking spray, then arrange the thighs inside. Air fry at 400 for 7 minutes. Flip and fry 7 more. Flip one more time and fry an additional 5 minutes. Look at that color! Let rest two minutes.
  3. In the meantime, preheat your oven to 400.
  4. Arrange the potatoes on a rimmed baking sheet and add the oil, garlic powder, rosemary and salt. Toss with your hands to coat. Roast for 35-40 minutes, until beautifully golden brown all over.
  5. Serve the chicken and potatoes with a crunchy green salad. Dig in!
  6. Serves four.
