Roasted Potsticker Bowls

How about four ingredients, whaaaaaaat! Total obsession.

This lil’ viral recipe I’ve been seeing everywhere. An Asian salad kit plus frozen potstickers plus a few scallions and chili crisp and you’re done. Dinner made itself. Half a finger was lifted. If that.

But the kicker for me was roasting the potstickers. I’ve never been known to roast a potsticker! (Almost said that in third person but remembered I like having human friends.) Spoiler alert: roasting is a TREAT. The end result is so different than what I expected.

Hold, let’s look.

You place the frozen potstickers on a baking sheet like this, flat side down. Drizzle a little bit of chili crisp over them. Doesn’t have to be perfect. Even sesame oil is great. Just something to add a little magic. Roast these for 20 minutes and omg.

Look at them! They slightly puff up, brown up, even crisp up. The pork is cooked through and the dumplings are bouncy and delightful. What an experience! We’ve roasted them ever since. And I filmed this recipe on July 8th. Ha!

Honestly, you just dump a bag of any Asian salad kit you can find into a bowl. Mine was from Aldi, and it had the dressing (obviously) in it, plus some crispy wonton strips. I’m guessing all variations of an Asian salad will have this. And it’s like $3 bucks, so it’s an extreeeemely affordable dinner. Add the potstickers, plus some sliced scallions, the dressing and the wontons. Just add it all. And violently.

Give it a tossy toss and you’re set. Transfer to a serving bowl (or not!) and get on in that.

My kids inhaled it. Aaron became it. Total success. I see why this is viral. Bonkers flavor, and twenty five minutes (most hands off!) to whip up and dinner is done. Dunzo.

You can even jush it how you like right at the end. Chopped peanuts, a splash of soy, extra chili crisp. Get it dialed juuuuust how you like it. Then sob forever because this is satisfying on all the levels. All of ’em.

Make it tonight!
