Asian Pork and Bean Thread Noodles

A new recipe! ‘Bout time, right?

This is beautifully simple. Like, you will be embarrassed. Comes together in a few minutes, and the flavors are rich, comforting and awakening. Plus it has garlic and ginger in it so it’s basically medicine.

Don’t quote me on that.

All you need is some ground pork or beef, a package of bean thread noodles (or any Asian clear noodle!), a few aromatics, a bit of soy, brown sugar and sesame oil. Some scallions and chili crisp for oomph. You’re all set.

I didn’t take any process shots because I’m not sure how effective they are anymore. At least in this space.

But look how silky and sexy that is! You’ll cook the bean thread noodles in a large pot while you sort of simmer the rest. Toss it all together until coated and luscious, then garnish the crud out of it. Lots of lime juice at the end if you know what’s good for you.

A really quick and amazing twist on Asian night. Also anything with noodles and I’m in. Sold. Sucker city. Done. Surrendered.

Asian Pork and Bean Thread Noodles

Ingredients

  • 5 cloves garlic, minced
  • 1 heaping Tbs. Freshly minced ginger
  • 2 Tbs. Sesame oil
  • 1 pound ground pork
  • 1/2 cup soy sauce
  • 3 Tbs. brown sugar
  • 1/2 pound bean thread noodles
  • Reserved pasta water
  • 3 scallions, sliced
  • Chili crisp, for garnish
  • Lime juice, for garnish
  • Coarse salt

Instructions

  1. In a wide skillet, add the sesame oil over a medium high heat. Once hot, add the ground pork and let sit for two minutes. Flip the meat and let it sit another two minutes. This will get some nice charring going on. Then break up the meat and cook until no longer pink. Add a pinch of salt and cook another minute. Add the garlic and ginger, cooking for two minutes until wildly fragrant. Add the soy sauce and brown sugar, cooking on low for a few minutes while the noodles cook.
  2. In the meantime, bring a large pot of salted water to a boil. Add the bean thread noodles and cook until just shy of al dente, maybe four minutes. Add about a cup of the pasta water to the pork mix and cook for a few seconds, then transfer over the bean thread noodles to the skillet. Gently toss to combine so that it’s all coated and gorgeous.
  3. Off the heat, garnish with scallions, chili crisp and plenty of lime juice to wake it all up!
  4. Serves 4.
