I think it’s safe to say this holiday was made for me. Never mind that I’m American or the history itself of Cinco de Mayo. But hello, TACOS.
It’s the one day of the year that you can eat 37 tacos and not be considered a freak.
I just started my day with a breakfast taco, and it ain’t endin’ there. We’re meeting some friends tonight for tacos, a few tacos and then another taco.
Saute some red onion, set aside. Slowly scramble an egg and add your favorite taco seasoning. I used that ancho chili powder I made a while back. Lightly fry a tortilla in your skillet. Top the tortilla with the egg, onions, shredded cheddar, fresh cilantro and a good drizzle of hot sauce. Hallelujah.
