Creamy Taco Pasta

Ohhhhh. Oh hi. Hello. Wow.

It’s one pot. It’s pantry staples. It’s like, Hamburger Helper vibes but with taco flavors and you guys, the tears shall flow flow flow.

Pony up.

We’ll brown some ground beef in either a wide skillet or a soup pot. Both methods work. Add some diced red onion and garlic, let that bloom. Add a packet of taco seasoning and maybe a splash of water. It will become so fragrant and silky and savory. I mentioned the tears, right?

Throw in a can of Rotel. (just diced tomatoes with jalapeno) Get it stirred and married.

Add two cups of elbow macaroni. Get that coated and toasted for about a minute. Things are smelling insaaaaaaaane.

Then add two cups milk and one cup chicken stock. Turn the heat down and stir stir stir like you do with risotto. The pasta absorbs the liquid and the starches become silky and creamy and I MENTIONED CRYING, RIGHT?

Divine. You’ll add cilantro and lime juice if you want. It’s so incredibly simple and weeknight glorious.

The flavors are scrumptious and comforting, nostalgic and rustic. You will love it. Your kids will love it. Everyone will love it.

Ingredients

  • 1 pound ground beef
  • 1/2 medium red onion, diced
  • 4 garlic cloves, chopped
  • 1 oz taco seasoning packet
  • 1 (10 oz) can Rotel (or any can of diced tomatoes with jalapeño)
  • 2 cups elbow macaroni
  • 2 cups milk
  • 1 cup chicken stock
  • Salt to taste
  • Freshly minced cilantro

Instructions

  1. In a large skillet or soup pot, brown the ground beef. (Drain any excess fat) Add the diced onion and garlic and let cook and bloom about three minutes. Add the taco seasoning and maybe a splash of water. Let this cook another two minutes. Add the canned tomatoes and stir to combine, followed by the two cups of elbow macaroni. Then add the milk and stock.
  2. Now we’ll turn the heat down and stir just like a risotto. We don’t want the pasta to stick, so just make sure you stir every few minutes until it absorbs the liquids and becomes silky and creamy. It will take about 10-15 minutes.
  3. Off the heat add some lime juice and minced cilantro. Add a pinch of salt to taste if you need it.
  4. Get that ladled into bowls and inhaled as fast as possible.
  5. Serves 4-6.
