Look who got an air fryer! (hint: it’s me)

Actually, my dad bought me an air fryer a few weeks ago and I’m officially a CONVERT. It’s great! Who knew! Besides all of you. So today I’m going to show you how I whipped up a very simple cubed salmon dusted with spices and coated with oil – in the air fryer!
This is all very exciting but also I need friends.

I took a pound of salmon, cubed it up into little one-inch pieces and smeared it with a mix of spices and oil. We’re talking chili powder, cumin, garlic and onion powders, salt, a bit of lime zest and juice. Your standard cast of characters. And boy is she pretty.

Do you guys preheat your air fryer? Sometimes I do, sometimes I don’t, and I honestly can’t tell if it makes much difference. So you’ll have to tell me if it does for you.
For THIS, I sprayed the little basket with a spray oil, then arranged them in a single layer. Cooked about five minutes. Shook and pan and went another three or so minutes. Doesn’t take long at all! And hello, I love the look.

While the salmon cooks, you’ll whip up a little relish with avocado, peach, red onion, cilantro, garlic and lime juice. Like really throw in that lime juice. We need the acidity to brighten everything. To wake it up! (like I’ve obnoxiously preached for 14 years on this internet website blog URL.)
(also you can totally use mango here if peaches ain’t ya jam.)

Sooooooo good. The salmon is perfectly flaky and flavorful. The relish is bright and alive with that perfect mix of crunch and creaminess. Best of both worlds, really.

You might want a tiny pinch of finishing salt to taste, or a spritz of extra lime – taste it and get it juuuuust right for your buds, bud. Ha!

Unhinged and simple to boot. A new twist on taco night, if you will!

Air fryer life! I’m in.
Ingredients
- 1 pound salmon, cut into one-inch pieces
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 5 Tbs. Extra-virgin olive oil
- One lime, zested and half juiced
- 1/3 cup chopped red onion
- 1 avocado, diced
- 2 medium peaches, diced
- 1 heaping Tbs. Chopped cilantro
- 2 garlic cloves, grated or minced
- 1-2 Tbs. Lime juice
- 8 small flour or corn tortillas, lightly toasted
Instructions
- In a medium bowl, add the chili powder, cumin, garlic and onion powders, salt, oil, lime zest and juice. Whisk to combine. Add the cubed salmon and gently stir to coat.
- Lightly coat the air fryer basket with spray oil, then arrange the salmon in a single layer. Air fry at 375 for 5 minutes. Shake the pan and air fry for 3 more, until the salmon is cooked through and you get some nice browning all over.
- In another bowl, combine the red onion, diced peaches, cilantro, garlic and lime juice. Toss to coat. It’s gorgeous!
- Place a few salmon pieces inside each toasted tortilla, top with the peach and avocado relish, spritz with more lime and you’re set. Dive in.
- Makes 8 tacos.
