Vegetarian Week!

It’s here! It’s time to throw all cattle, pork and chickens aside and focus on fruits, veggies and whole grains.

It’s only for 7 days. Stop crying.

I have five dinner meals planned. I’m leaving the other two open. Sometimes life takes you unexpectedly to a patio. Sometimes you just have no idea what to make those remaining two nights. Sometimes even Linda McCartney can’t offer inspiration. If you have any suggestions, I’d love to hear them!

The menu below is in no particular order:

* Quinoa Salad with Corn, Avocado and Pepitas

* Indian-Spiced Sweet Potato Soup

* Chickpea Burgers with Salad

* Gnocchi with Marinara

* Nori Rolls with Shiitakes and Soba Noodles

Now, for breakfast I usually have a variation of eggs, whole grain english muffins, fruit, yogurt. Nothing will change there. Lunches may be tricky. I’ll try and stick with the leftovers from dinner, salads and vegetarian wraps made by Amy’s or Cedarlane.
