One Pan Creamy Gnocchi with Beef and Tomatoes

One-pan-dinner alert! (Also it has spinach in it so it’s basically a salad. Don’t tell anyone I said that.)

This right here? It’s what these autumn nights are made for. Comforting, flavorful, creamy, decadent without feeling like a total gut bomb. And you saw the thing about it being in one skillet, right?

Right.

We’ll truly just brown some ground beef but here’s the kicker – with a ranch seasoning packet! Look at us being all tricky and slick. It takes the beef to an 11, and you just shook it out of paper. Done. So delicious. So elevated.

(yes I just used the word elevated to describe ranch seasoning. try and love it.)

One can of fire-roasted tomatoes + one can of water to follow to rinse the rest out + one cup of milk. Let it simmer simmer, then add the gnocchi. Dried or frozen, both work. We just need our lil’ potato pillows to get soft and tender in that richness and we are set.

Off the heat we’ll add spinach for pretty (and nutrients blah blah), followed by a heavy hand of freshly grated parmesan cheese and that’s all she wrote.

This comes together in about 20 minutes, so it works before soccer, after soccer, during soccer (maybe not then), before platinum strings, after platinum strings, during platinum strings (maybe not then.) It just works. So simple and quick and sickeningly comforting. You’ll need it this week.

Your family will absolutely die.

Creamy Gnocchi with Beef and Tomatoes

Ingredients

  • 1 pound ground beef
  • 1 oz ranch seasoning packet
  • 15 oz can diced fire-roasted tomatoes
  • 15 oz water (in the tomato can)
  • 1 cup milk
  • 1 pound dried gnocchi (frozen is fine, too)
  • 4 -5 handfuls baby spinach
  • Freshly grated parmesan, for garnish

Instructions

  1. To a wide skillet, add the ground beef over a medium-high heat. Let it sit a minute or so that it gets a good sear on the bottom. Flip and it let it sit another minute. Break it up with a spatula and cook until no longer pink. If you need to drain any fat, now’s the time. Add the ranch seasoning packet and cook another minute so that it coats the meat.
  2. Add the fire-roasted tomatoes and a can of water to rinse the rest out. Simmer one minute. Add the milk and bring it back to a light simmer. Add the gnocchi and let this cook about five minutes, or until tender.
  3. Off the heat add the spinach in a few handfuls and let wilt. Stir it all until rich and creamy. Taste it. Need any salt? Mine was seasoned enough with the ranch, but add a little salt if it needs!
  4. Garnish with parmesan and serve immediately.
  5. Serves 4-6.

    I made this, and I think it has potential to be tasty, but unfortunately I used refrigerated gnocchi which I dont think absorbed enough of the added water so it was just too bland. My fault! If you use refrigerated gnocchi I would only add 1/4 cup of water. Love how quick it came together though!
