Chicken Dorito

I want that cheese to be my blankie.

Oh hey! I survived the gators yesterday when kayaking. And the sharks. I guess crocks and sharks can coexist in salt water? Nasty, is all I have to say about that.

HOWEVER, I was this close to losing my shiz over the 18,264 spiders in our kayak. Ummmmm, I do not do bugs. Never have, never will. Barfy. McGee. And these things were everywhere. EVERYWHEEERE I tell you. One little troll was making a FRICKIN’ WEB between my jorts and the side of the kayak and ohhhhhh myyyyyyy lskfjsldkjfsljdf, that did not go over exactly well.

A) I stood up in the kayak and started screaming. I guess you’re not supposed to do that in a teeny boat in a large body of water? Oh, oopsie.

B) I used my bottle of water as a sword to protect myself against their evil ways. Apparently my clanking and unruly hysterics were obnoxiously loud and frowned upon by the other kayakers next to me? Sorry, but I WAS BASICALLY BEING SPUN INTO MY OWN WEB OF DEMISE.

But I’m alive and my breathing has returned to a semi-normal pace. AND I’m excited to tell you that I’m going to climb to the top of a lighthouse today!

And when I get to the top of it I’m going to grasp the railing, gaze longingly into the distance and sing “Candle On The Water” from Pete’s Dragon! And then probably fall or get shoved off by a local.

And if I do we can just go back to plan A for the funeral, cool?

As my last words I’d like to beg you to make this chicken dorito. I’m SURE you’ve made a version or 45 of it before. It’s basically a mexi-casserole filled with crack. Creamy, spicy, chicken-y, cheesy crack.

She looks kind of sloppy, I know. But isn’t that what dreams are made of? Something?

S.N.U.G.G.L.E. I.T.

Forget the fork and just stick a large funnel in your mouth hole.

Chicken Dorito:

What it took for 4:

* 1 rotisserie chicken, shredded
* 2 Tbs. taco seasoning
* 1 (13.5 oz) can cream of chicken soup
* 1 (13.5 oz) can cream of mushroom soup
* 1 (14.5 oz) can rotel
* 2-3 cups white cheddar cheese
* 1/2 bag blue corn tortilla chips (or you could use the traditional Doritos)

Preheat oven to 350.

In a bowl, combine the chicken, soups, rotel and taco seasoning. Mix well.

In a large casserole dish (or two smaller ones), spread the chips along the bottom. Pour the chicken mixture over the chips, followed by the shredded cheddar cheese.

Cover and bake 30 minutes. Remove covering and flip the oven to broil to get the cheese brown and bubbly!

Garnish with a little chopped fresh parsley and deeeevouuuuur.

    So I surprised my wife with this dish last night. She was floored. She said it was the best thing I've cooked in a while :) I deviated from your recipe in that I made my own salsa rather than buying Rotel. I cant pass up using fresh cilantro and tomatoes. Also I poached my own chicken and shredded it into the sauce. Thank you thank you and thank you for teaching me this recipe :)

    My husband made this for me as a "welcome home" dinner after I'd been away at a conference eating nothing but bad banquet food for a week. I won't even pretend there was any left for seconds. I'll happily admit that we ate the whole thing in one sitting. That was exponentially better than coming home to flowers and take-out - or anything else. Thank you!!

    I have 10 oz cans of the soup. Do they make 13.5 oz cans? Should I drain the rotel? How long should I broil it?

    This looks like the perfect meal to get ready for all the good Superbowl eatin' going on tomorrow! My boyfriend is the pickiest person in the world, and even he's excited about this dish. Can't wait to try, thanks for sharing! And btw, you're the bravest person I know for staying in the kayak with all the bugs. I look like a ninja trying to escape any bug that's near me. I would've dove into the water for sure- I'd take sharks over bugs any day.

    ANYONE who doesn't understand a woman's TOTAL FEAR of spiders (UGGGGHHHHH), does not deserve to be anywhere near women. Come on boys, MAN UP and kill those nasty beasts! My nightmare of all time is spidery.....Snakes, mice, maybe rats, Who cares, but creepy crawlies scare the crap out of me. I'm just about to begin my travells to a new, improved and streamlined body, but after that GD health-conscious trek is over, I'm gonna make this AS WRITTEN!

    Do the tortilla chips at the bottom stay crisp or do they get soggy? I was thinking of making this for a group and possibly assembling everything in the pan the night before, then baking right before group. If the chips are supposed to stay crisp, I imagine the whole thing sitting assembled over night in the refrigerator would make the chips incredibly soggy.
    • Bev Weidner September 14, 2014 at 7:18 am #
      I won't lie, a few DO get soggy. But it's not offensive sog. It's a sog you you don't really mind. A friendly sog. Either way, let me know how it turns out!
      • Sharon Lurie October 7, 2014 at 3:33 am #
        Alright. Also, what do you mean by large casserole dish? How many quarts? Thanks!
        • Bev Weidner October 7, 2014 at 6:38 am #
          Hi, Sharon! 9x13 will work perfectly!

    I just had this for dinner and it was awesome. I added green chili's to the chicken mixture. I also used boneless skinless chicken thighs that I cooked and shredded. I used a whole bag of blue corn tortilla chips it was a small bag. I garnished it with fresh cilantro and diced raw white onions. Served chips,salsa and sour cream on the side. Everyone really enjoyed it. I also think I might add a can of refried beans next time. I will definitely make it again!
