Pickle Juice Salad Dressing

Have you even HEARD of this? Oh, we’re making it immediately.

I saw a video of a dude on IG making this pickle juice dressing using the remaining pickle juice in the bottom of a jar, which is my life thrice a week, given the amount of pickles my offspring snarf.

Um, it is amazing. AMAZING. Has the perfect tangy punch without being too pickle-y. But I love pickles to freaking death, so this is right up my alley.

I remember as a kid we’d visit my grandparents in Dermott, Arkansas every summer and I’d eat those GIANT pickles, just one after another after another. My grandmother would have to put the stop button on my mouth, “Child, you’re going to turn into a pickle.”

I never did, Grandmother. Here’s my second chance at that.

Tahini goes in. Which adds a fabulous nutty element. Minced shallots go in! Gives it that wonderful aromatic note. Dijon goes in. I mean of course. And olive oil. It’s like, perfect.

Oh! I added a few thyme leaves, just to round out its earthiness. I’m known to do that in life. Round out its earthiness.

Also I have no idea what I mean by that.

You guys. It gets a good shake and poured over some chopped, crisp romaine. Add a bit of freshly shaven parmesan and a few cracks of black pepper. It’s perfect! It needs nothing else. You know when you’re looking for a simple side salad to add to your dinner? THIS. I love his tuscan kale dipped in, but romaine is great, too.

Really though, make this dressing before I lose my mind.

Pickle Juice Salad Dressing

Ingredients

  • 1/4 cup pickle juice
  • 1 Tbs. Dijon mustard
  • 1 Tbs. Tahini
  • 1 Tbs. Minced shallot
  • 1 tsp thyme leaves
  • 1/3 cup extra-virgin olive oil

Instructions

  1. Mix everything in a jar and shake shake shake! Taste that. Absurd, right? Adjust as needed with herbs or tahini. Pour over any chopped salad, topping with freshly shaven parmesan and cracked black pepper. Divine.
  2. Makes about a half cup of dressing, give or take.

    Must try!! Pickles are life. My gma also had a giant jar of the big honkin’ Best Maid Pickles in her fridge while I was growing up. Best after school snack!

    I've been making this for years! My addition is a big spoonful of plain greek yogurt. It makes ir extra creamy. I'll add thyme leaves next time!
