I keep thinking it’s Wednesday. On Tuesday I thought it was Sunday and on Thursday I thought it was Tuesday. Yesterday I thought it was Tuesday, too. Wait, yesterday was Thursday. But I still thought it was Tuesday. Thus making today feel like Wednesday. And making you feel like I need therapy, rest and/or wine.
Anyway, this start-of-the-weekend meal is brought to you by Pappardelle’s Pasta. This lovely little company is all over the country, but only at festivals and farmers’ markets. I picked up some fancy cilantro lime pasta this week when I visited our local farmer’s market, and I was the random, lucky customer who scored a bonus recipe with my purchase!
(Okay so they give everyone recipes. Shhh.)
This meal screams OMG WINNER big time. A) you get to use the grill. B) It’s pasta. C) It’s PASTA.
If you don’t have a Pappardelle’s near you, you can always order online. But if you’ve noticed their charming little booth at your market and have shied away each time, give them a go!
Hey, tell them I sent you! And watch their expression as they reply with, “Who the #%*& is that?”
Chicken Pasta with a Citrus Cilantro Sauce:
What it took for 2:
* 1/2 pound Pappardelle’s Lime Cilantro Pasta (or your favorite kind)
* 2 Tbs extra-virgin olive oil
* 2 cloves garlic, minced
* 1/2 cup frozen orange juice concentrate
* 1 cup water
* 1/2 cup fresh lemon juice (from 2 lemons)
* 2 Tbs. dijon mustard
* 2 Tsp tomato paste
* 1 Tbs. soy sauce
* 1 Tbs. freshly minced ginger root
* 2 boneless skinless chicken breasts
* 1 bunch fresh cilantro, roughly chopped
In a small bowl combine the oj concentrate, water, lemon juice, oil, tomato paste, garlic, ginger and soy sauce. Whisk together.
Toss the chicken into a large sealable plastic bag and add half the oj mixture. Marinate in the fridge for an hour.
Grill the chicken until cooked through. Let rest for 10 minutes, then slice bite-sized chunks and set aside.
Heat the other half of the oj concentrate in a small pan and simmer about 5 minutes.
In the meantime, cook the pasta until al dente. Drain and transfer back to pot.
Add the chopped cilantro to the pasta and toss. Add the sauce and toss once more. Finally, toss in the chicken chunks, toss and serve her up!
