Look at her posting dessert! (or breakfast?)

Either way, this is keeping the doctor away and we’re all about it.
It’s simple, it’s comforting, it stunningly delicious and you need to wrap the rest of your September around it. As in today.

We have an apple tree out front. Aaron planted it right after we moved in, close to 18 years ago. Gala apples. They’re sweet and perfect for this type of dessert. Breakfast. Snack. Whatever we landed on. I picked eight, peeled ’em, cored ’em, cut into bite-sized pieces and wept for what was ahead.
Get some lemon juice on them, a bit of cinnamon, vanilla, a little flour. Serious business here.

You’ll make the crumble part next. Rolled oats, flour, baking powder, more cinnamon, an entire stick of (mostly) melted butter because fall. Unhinged.

Pour the apples into a baking dish and top with the crumbly topping. Into the oven, bay-buh!

Okay, yeah. You need to know now that the sides will bubble up with a little caramelization and your heart will go pitter patter. The topping is soft, buttery, crumbly and to die for.

You’ll bake it anywhere from 30-50 minutes. I know that’s dramatically different times but you need the apples tender, the crumble browned and bubbly and your entire upper torso ready to catapult into it.

Ingredients
- For the filling:
- 8 medium apples, peeled, cored and cut into bite-size pieces
- 1 lemon
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 heaping Tbs. All-purpose flour
- For the topping:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 cup sugar (white or brown)
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 stick of butter, melted
- Pinch of salt
Instructions
- Preheat your oven to 350.
- In a large bowl combine the cut-up apples, juice from a lemon, brown sugar, vanilla, cinnamon and flour. Toss with a wooden spoon to fully coat. Pour them into a baking dish.
- In another bowl (or the first one, wiped clean), add the oats, flour, sugar, baking powder, cinnamon and melted butter. Add a pinch of salt and stir this to create a good crumble.
- Pour this over the apples in the baking dish.
- Bake anywhere from 30-50 minutes, until the apples are tender and the topping is browned and bubbling in places.
- Serve with vanilla ice cream!

Vanilla ice cream is non negotiable.
