Roasted Tomato Garlic Toast

I’m not going to bore you to death over my love for tomatoes (the perfect food!), but just look at this.

Summer is coming, and while I’m forever a die-hard lover of fresh tomatoes marinated in oil with garlic and basil and red onion (how can you not make your entire life about that), this is something else. Something special. Something that wows, impresses and blows ya straight down to the floor and back.

Shall we peepeth?

The simple meter is off the rails and the flavor meter is orbital.

We’ll just get it all violently tossed in a small baking dish and cover with oil. About a half cup, I’d say.

Into a 300 degree oven for 90 minutes aaaannnndddd…

Right out of the oven it sizzles and pops and there’s nothing in the world like this show stopping biz.

And don’t even get me started about how it smells in your kitchen right now.

Let the garlic rest for a little bit, then squeeze the cloves out and back into the tomatoes. A gentle stir, a bit of spreading on good toast, a sprinkling of fresh basil and nutty parmesan.

This is living, you guys.

An afternoon snack, a party appetizer, a little breakfast nibble. It works. Like all the dang time it works.

Roasted Tomato Garlic Toast

Ingredients

  • 1 pint cherry tomatoes
  • 2 garlic heads, tips sliced off
  • 1/2 cup extra virgin olive oil
  • Small bundle of thyme and oregano stems
  • Coarse salt and freshly ground pepper
  • Sliced toast
  • Fresh basil and parmesan cheese for garnish

Instructions

  1. Preheat your oven to 300.
  2. In a small baking dish, add the tomatoes, two heads of garlic (exposed cloves facing up), the oil, herbs and a pinch of salt and pepper. Gently stir so that the oil covers the garlic and herbs. Roast for an hour and a half, until the tomatoes are bursting and tender, and the garlic is perfectly browned.
  3. Remove the garlic and let it rest about ten minutes, then squeeze the cloves out and back into the tomatoes. Give it one more stir. Remove the woody stems from the herbs.
  4. Spoon the tomato garlic mix onto your best toasted bread. Garnish with basil and parmesan and enjoy your life.
  5. Serve four - six.
