It’s theme week on the http://www.bevcooks.com blog internet website URL!
And no, the theme is not Bev Discusses Her Struggle With Nail Biting. Although I’m sure that would be so much fun for you?
I’m actually featuring recipes from all my friends’ current cookbooks! Also known as Why Didn’t I Think Of That.
So to kick things off (I feel like I need a long skinny mic. and a toupee.) I want to bring to the stage a lovely blonde whose face is cool on camera, while she wrestles a palate of the picky variety in the kitchen.
Jenny Flake, come on doooooown!
(applause, applause)
I could spread Jenny on a CRACKER I love her so much. She has honest eyes, an open heart, the sweetest brand new miracle baby, and hair so silky you want to knock her out cold, snip some of it off, stick it in a zip lock, and send it off to a super secret hair lab in Timbuktu to reveal her secrets. But only to me.
And her food? Oh honey child.
I picked this BBQ Chicken-Pizza Soup because I’m completely obsessed with soup right now. And when I read that you stick a bunch of bbq sauce right in the dang soup, I thought, “Ugh. I love that. How did you think of that? And ignore this huge pair of scissors in my hand.”
This soup is fayast, you guys. It comes together in about half an hour because the bbq sauce is already so complex, there’s no need for all the flavors to mingle, fall in love, marry, have babies and all that. It’s freaking genius. And I hate Jenny and her stupid perfect hair for thinking of it.
Do you have this cookbook yet? I mean seriously do you have it? If you nodded your head just now, good girl. If you shook your head, ohhhhhhhhh man.
Let me just get to it. I’m giving away a copy of this book, but first I have a burning, picky question.
What are you most picky about in life? Manicured nails? The best brand of tires on the car? Certain lawn fertilizer?
Spill it in the comments below for a chance to win the new Picky Palate cookbook! And of course you can follow me here, here, here and here, and just lemme know. I’ll announce the winner Friday morning! Gerd lerk.
BBQ Chicken-Pizza Soup:
(From the Picky Palate cookbook)
What it took for 4 (small bowls) or 2 (big bowls):
* 2 Tbs. extra-virgin olive oil
* 1 cup finely chopped red onion
* 2 Tbs. minced garlic
* 2 cups shredded cooked chicken breast
* 1 (11-oz) can Mexi-corn, drained
* 1 1/2 cup chicken broth
* 1 cup chopped fresh cilantro leaves
* 1/2 cup favorite bbq sauce
* 1/2 tsp kosher salt
* 1/4 tsp freshly ground black pepper
* 1/4 tsp garlic salt
* 1 cup shredded mozzarella cheese
Heat the olive oil in a medium pot over medium high. Add the onion and sauté until it softens, about 5 minutes. Add the garlic and sauté another 30 seconds.
Add the chicken and corn; stir to combine.
Then you’ll add the broth, cilantro, bbq sauce, the salt, pepper, and garlic salt. Stir that. Smell it. Oh MAN believe it.
Now just reduce the heat to low and simmer 10 minutes. That’s it!
Ladle the soup into bowls and garnish with mozzarella cheese and a little more fresh cilantro.
p.s. Jenny, I’m not really going to cut your hair. Maybe.

Yay for Jenny!
I actually have 2 things I’m really picky about.
1. The brand of spaghetti noodles I use.
2. Sweeping off the mown grass that sticks to my house and front door!
Super picky when it comes to work pants!
I’m picky about the types of foods and flavors I’ll mix together. I’m picky about how things are folded – must be neat folds.
i try not to let any of my picky tendencies show through too often…but one thing i cannot ignore is people who, after eating their dinner will put their dessert right on top of their dinner swirls on the plate. my dessert and my dinner cannot ever touch. and i cannot control my gag reflex when i see others who let theirs touch. =)
I’m super picky about the way my smoothies are made. I don’t know why, but no one can make a green smoothie as good as mine
Oh I’ve made this and it’s divine!!!
I am picky about food, for sure!
I’m super picky about wrinkles. I hate them…
I’m picky about how the towels are hung in my bathroom. They must be tri-folded. My husband isn’t as picky though…it’s a constant battle!
ooooh! i LOVE this giveaway!
i am SUPER picky about the way the kitchen towels hang. no, that is not a lie. yes, i make my whole household crazy.
xo.
Uber picky about my t.p. Seriously, once I got a job out of college I was like if nothing else I WILL buy myself good toilet paper.
I’m picky about a clean home, it has to be clean or it drives me nuts!
i am super picky about eating out at restaurants! i am that annoying high maintenance diner who asks for this, except without this, and this on the side, and substitute this instead!
i follow you on twitter! @biancatang
I used to be super picky about dark clothes and dog hair…but I’ve now got a dog that I love to bits and dont give a hoot about dog hair anymore. Dont wear dark clothes and problem solved!!
I am super picky about the pillows and blankets on our couch. They must be neat, folded and draped properly, or I go berserk!
I’m very picky about my desk being clean, especially if I need to work on a big project!
I am super picky about the brand/type of pen that I write with. The perfect pen can actually make bill paying tolerable!
I love Jenny’s new book. And this soup? Slay me dehhhhdd.
Cheese. It must be Tillamook cheese….there is no substitute, and it’s totally worth the extra buck or two per pound.
This looks divine.
I am picky about the timer on the microwave being cancelled after you take your stuff out before the ding. I hate to walk into the office kitchen and see :32 on the microwave clock. I know it is not :32 or I would still be curled up in bed, sleeping. Just hit the clear button folks, it’s sooo easy to do.
I’m extremely picky about clean floors and cannot stand for a dirty shoe to touch my floor!
I don’t like to leave the house unless the dishes are done!
“I could spread Jenny on a CRACKER…” Bwahahaha. Ah, Bev. I could spread YOU on a cracker. What am I most picky about? What am I not? Don’t need the fabulous book…but totally need that soup.
I am very picky about the brand of pasta I purchase. Flora only. I am also picky about the way my food goes on the conveyor belt at the grocery store. Cans…glass…boxes…meats…fruits & vegetables…chips…breads and eggs. I don’t like to get in a line that is short cause I feel pressure to put my items on quickly. It’s a sickness.
Pens! I love using the PaperMate profile bold pen and nothing else!
I’m so horribly picky about how I eat my food. Even sandwiches I have to eat in parts. And nothing on my plate can touch. So weird.
Yum, that looks good!
How reassuring to see people are picky about all the things I am too! So I will say all of the above, plus my bed. It HAS to be made or I go a little crazy until it is all nice and put together.
I am on a mission to get my hubby to consider soup a “Man food” and I think this hearty mix will do the trick. Yuuuumm!
Baking fiend that I am, I’m picky about my chocolate chips. If one of the ingredients is “Chocolate liquor” vs. actual cocoa, it creeps me out. While I don’t get the really good stuff (ghirardelli, etc) unless it is for a special occasion, I do opt for Tollhouse over the store brand.
I’m picky about putting food on a serving plate – no bags or boxes to dig into on the table!
This soup looks soooo good!
Me too! Even when we host potlucks!!!! Probably drives others nuts!
I am picky about vehicles. We only drive american made.
I am really picky about the pictures I use on my blog – overthinking and obsessing right up til I hit publish.

i NEED to floss my teeth atleast once a day…
and i’m super picky about how the sugar choices are arranged in the caddies on tables in restaurants…drives me nuts when they’re in disarray!
I am really picky about cleanliness in my home. I hate seeing things lying around on the floor or anything to be dirty.
I’m picky about the radio in my car. The volume MUST be adjusted in intervals of five, and I usually never exceed 30, unless I’m alone and completely rocking out and singing at the top of my lungs.
I’m really picky when it comes to homemade chicken noodle soup. The noodles MUST be homemade egg noodles and the chicken MUST be shredded from a whole roasted chicken. There MUST be chicken bouillon of some sort in it for flavor and there absolutely CANNOT be anything other than chicken, noodles & sliced carrots in it (I better not see a SPECK of celery in that soup!). I know. PICKY. My family did this to me. Their soup is just too good

This is a brilliant recipe! LOVE! Let’s see, I’m the most picky about people washing their hands before they stick them in my ice cube container. I mean, come on… that’s not asking too much. I hate germs and icky things!
I’m extremely picky about my drawings, the idea in my head never looks quite right on paper! I have to keep editing and editing until I’m satisfied, but I rarely am when it comes to anything design-related. I’m such a perfectionist!
Hey Bev!
Wow, this soup is pure genius! And you’re so awesome to host this giveaway! I’m so picky on brands of toilet paper! I can’t use the cheap Kirkland brand, as cheap as it is.
I am picky about food… even when I make it myself I still dissect it and pick things out of it.. oops
I’d put a straw in that.
Love this! Such a unique combination of flavors for soup.
I am most picky about my nails being smooth. I hate when there’s a jagged edge! I carry a nail file at all times.

Awesome giveaway. I am picky about where things go in the kitchen. Everything has a specific spot in my mind. My boyfriend occasionally empties the dishwasher for me, which is sweet of course. However, it drives me nuts moving everything to where it goes.

This soup is the opposite. I need it in my life!!
I’m super picky about dirty dishes in the sink. I cannot let them be there for more than 10 minutes without feeling compelled to clean them all IMMEDIATELY. And it’s all I can do to not rush over and clean all the new plates/utensils that in the sink and are left there for hours by a housemate..it drives me nuts!!
Having my bed made every morning!
This soup looks so good, and the fact it comes together fast is a bonus! I am super picky about how my dishwasher is loaded. It drives me nuts when my kids load it wrong. I have to re-do it, hence canceling out all their “hard work.” I blame it on my OCD.
Making this soup tonight! And I. Can’t. Wait.
I’m picky about the light switches in my house. They all need to be flipped in the same direction (down) when the lights are off. I.e. no turning a light on upstairs then flipping it off downstairs- it screws up the neatness of the switches! Drives me nuts.
I’m picky about folding laundry!
I’m picky about the pens I use. I have a certain kind I use at work and another kind I use at home and keep in my purse.
I’m picky about clothes hangers all facing the same direction on the rod in the closet AND the toilet paper HAS TO roll over the roll, not under.

I am picky about…..oh so many things. But at this time of year, with the holidays fast approaching, I like a clean and dirty-dish free kitchen.
I also follow your lovely instagram stream.
I’m picky about this that can be seen being tidied up, like dishes in the sink or unarranged throw pillows on the couch make me panicky, but my garage is a disaster and you don’t want to see the slew of kid toys/dog toys/lost sippy cups lurking under my couch right now.
I am picky about placement of things in the cupboard. Each thing has its place. Plus, a dirty stove-top. Maaybe just a little OCD about it.
I feel a little OCD after reading these comments and realizing I’m picky about most things! But mainly about baked goods (must be worth every evil calorie!) and my face wash. Must be Philosophy Pure…nothing else will do!
i’m picky about the books i buy! i only want ones that i can read forever.
I am picky about toothpaste!
I’m picky about cookies — must have the right amount of butter & salt in them. Nothing worse than an all-sweet cookie.
Also, I’m picky about toothpaste. Only 1 brand that matters/works/foams/cleans — Aquafresh Extreme Clean…this is not a paid comment.
I’m picky about my coffee.
As someone who is working hard to quit being a control freak, I have loved reading all of these responses. I’m also crazy about the way the dishwasher is loaded, bathroom towels folded, and how leftovers are arranged in the refrigerator.
Oh YUM!! This looks wonderful! Thanks so much for the opportunity to win!
I am really picky (read OCD) about how clothes hang on a hanger…the hook must point to the left when the shirt is facing me or it’s a no go! Lol

I was googling BBQ chicken recipes and saw this come up a BBQ chicken pizza soup….SOUP? Then it fascinated me enough to look, it looks delicious! Now I started thinking what other pizza recipes would be good as a soup…?? My wife has been making all our homemade soups since I met her so I might have to scratch her brain with this one! Thank you!
I made this last night and it rocked! I’m not totally sure how the “pizza” element gets in there (oh wait, answered my own question – mozzarella cheese), but it was completely delicious. You’re definitely correct that these measurements will only feed 2 hungry people — I wish I had made more for leftovers!
Has anyone tried to put all of this together in a crock pot and cook all day? If so, how did it turn out? Thanks!
