Favorite Breakfast Burrito, That Has Yet To Be Folded Into a Burrito.

Remember when I was telling you about my faaavorite breaaaaakfast EEEVVAAAHH?

Well, I have another one.

Every time I’m at the store, I can’t resist throwing a package of tortillas in my cart. Ya never know when the urge for taco night might erupt. Ya never know when a breakfast taco or burrito might hit the spot first thing in the morning. Ya never know when melting cheese over a tortilla in the middle of the day would be the perfect snack. Ya never when you’ll suddenly need to stick a rose in your mouth, turn on salsa music and dance your way into the night with the tortilla, never to be seen again.

Not that I, uh, have ever done that. Maybe once. Or more.

The Breakfast Burrito:

What it took for 1:

* 1 egg

* 1 whole grain tortilla

* 1/4 cup aged white cheddar cheese

* 2 cups spinach

* 2 Tbs. hot sauce

* salt and pepper

* cilantro for garnish

I’m sure you know what to do!

    I really needed this this morning. I mean REALLY NEEDED IT. I should have known it would have been wise for me to stop by your house unannounced on my way to the office this morning. 2 WHOLE CUPS of spinach! That's healthy, ya'll.

    Gorgeous photo! My fave breakfast is probably [still] good ol' cereal, even though I don't eat it much anymore...it's dangerous for me. I've been known to eat half a box in one sitting... >;P

    Gotta love a huge breakfast burrito!! My current favorite breakfast is really creamy oatmeal ... this cooler weather is bringing out the oats in me!

    Yum yum. I love breakfast.... especially anything with hot sauce!!!! But then again I could pour hot sauce on a piece of paper and it would probably taste good to me ;)

    You can't go wrong with a breakfast burrito. I like to add fresh avocado to my burritos.

    Yummy! I just saw a ton of breakfast burritos on Pinterest and non that looked this healthy! I love to make mine with spinach too. ;)

    Oh, and a my new favorite quick breakfast go to is a smoothie (found on the Mad Hungry show) 1 c ice, 1/2 c frozen raspberries, 1 banana, 1/2 cup old fashioned oatmeal (uncooked), 1 c coconut water, 1/2 c plain yogurt, 1 tbs honey. Add ice first, then dump in everything else and blend well. It's really delicious and filling b/c of the oats. I change the fruit around and sometimes add golden flax or a little flax oil too. enjoy! :)
