I just figured out your new favorite lunch of all time.
It involves sun-dried tomatoes (yes, again). And mascarpone cheese. And the grainiest, sproutiest bread you can find. A kiss and half of butter. Your giddy pants.
Like always, I buy a tub of the mascarpone cheese with a fat stash of plans to make tiramisu. And like always, I get nervous and lazy and intimidated and hungry and start spooning it into my orifice like a complete psychopath.
Which I’m okay with! It’s who I am.
But then I thought, “Don’t be nervous. Just get in there and tweeze it out!”
Oh wait. That’s . . . for . . . not you.
“Why not combine the mascarpone cheese with these sun-drieds I have and make myself a dang grilled cheese sandwich!”
I loved this sandwich so much I’m going to show you four more photos of it. Can yew dig?
It’s like the royal version of a pimento cheese sandwich. The Rolls Royce! Laced with specks of gold and sliced angel wings. Engraved with the signatures of kings past. Blessed by the Fairy Godmother and exalted by the Countess of Jubilee.
And that’s just the bread!

But it’s sogoooooood! That creamy sweet mascarpone blended with the tart sun-dried tomatoes aaaaaare you kidding.
Even if you don’t have time to shove this mixture into a sandwich, spread it on some crackers! For the love of the baby ponies, spread it on the crackers.

Sun-Dried Tomato and Mascarpone Grilled Cheese Sandwich:
What it took for ONE. That’s right. One:
* 6 or 7 jarred sun-dried tomatoes, plus a Tbs. of its oil
* 2 Tbs. mascarpone cheese
* 1 Tbs. butter
* 2 slices favorite grainy bread
In a food processor, pulse the tomatoes with the mascarpone cheese until smooth. Spread the mix on one slice of the bread.
Melt the butter in a cast iron skillet (or any skillet you love) Place the bread in the skill – you know what. You know how to do this.
But please, do this.
And if you need to just stick your whole upper torso in the bowl, that works.
