Happy Two-Year to meeeeee! Who wants bean dip?
Truth is, I nearly forgot about my blogibirthery. I KNOW.
I’ve been super distracted lately becauuuuuse there’s this tree in our back yard. This huge top-heavy tree in the back left-hand corner of our yard. And over Memorial Day weekend, when we were out of town, doing all of this, it snapped and fell in half. But it was still attached to the bottom half of the tree! It was weird and sad. Looked like a really confused capital L.
So we get back Monday afternoon to discover this wonk-a-lonk tree sitch, and it’s like, really? Ain’t nobody got time for dat! (you hate me) So then it was a couple of days of figuring out how in the boohonky to get this tree down, other than call a company to take care of it, because we like to be super complicated. Husband borrows a tree trimming thingy. He saws it all down. He cuts the main stump things into logs for the fall and winter, yay.
Buuuut, now there are katrillions and bajillions of leaves and twigs and small branches and limbs aaaaaall in our yard still and I want to stab the entire world. We look like we live on COPS.
Gosh I really love that show.
I mean, you can clearly see how I almost spaced this monumental day in history (in my head). Stupid tree.
So I made a spicy bean dip that kinda sorta tastes like the stuff from the can! It’s spicy. And garlicky. And blogiberthery-y.
Thaaaank you thank you thank you, incredible reader friends for humoring me every single day while I feel the need to torture you with complete nonsense. You make me so happy.
Spicy Bean Dip:
What it took for about 1 1/2 cups:
* 1 (15 oz) can refried beans
* 1 jalapeno pepper, seeded and roughly chopped
* 2 cloves garlic
* 2 Tbs. olive brine
* 1/3 cup fresh cilantro leaves
* 1/2 tsp sweet paprika
* 1 pinch garlic salt
* 1 pinch coarse salt
Put everything in a food processor and blitz blitz blitz until smooth and awesome.
Chill for 30 minutes, or stuff your face immediately.
Garnish with minced jalapeno pepper and serve with Fritos!
Aaand because I’m a nerd I put candles in my bean dip. Ignore that waxy bite.
