You’re going to need to sit down.
Because this . . . THIS ^^ might deliciously ruin your life forever. It’s pimento cheese, which is already a problem I desperately need in my situation. But this version has Roth’s JALAPENO HAVARTI in it and I’m sorry but all caps are completely necessary.
Have you ever Havarti’d your pimento cheese? I never had until this. I have another version on my site that has the traditional cheddar in it, with some pepper jack thrown in. But I gotta tell ya, Havarti is a life game changer. And jalapeno Havarti at that. You may now proceed to weep.
Super simple sitch! We’ve got cream cheese (just half a block, so life is easy), a bit of mayo, Roth’s jalapeno Havarti, a few hamburger pickles (baby gherkins are totally fine!), a tiny jar of pimentos, one garlic clove, and a splash of jarred jalapeno juice. That’s it, babe.
Just dump errrrthang in a food processor. (But grate the Havarti first!)

After a few pulses, you’ll get this lovely mass o’ bliss. I really love my pimento cheese textured and lumpy but creamy and glorious. But keep on pulsing if you want it smoother and less texture-y. Ya weirdo.
And there she is.
I was honestly surprised just how pink the cheese got, using a whiter cheese! Those pimentos mean BUSINESS, man. They know they’re the star and they will not let you forget it.
But the jalapeno Havarti! Ugh, can we just talk about how perfectly creamy it is in this? And the spice isn’t overwhelming at ALL. It’s more like divine flavor essence of the jalapeno variety. Just BEAUTIFUL. And now I must add it to everything in my life.
Serve it with crackers, or as a classic, old-school sandwich! Totally reminds me of when I was a little kid (with no jowls), in the hot, humid summers, visiting my grandparents in south Arkansas. Takes me riiiiight back.
And now I’m about to take this riiiiiight back to my mouth.
Summer = pimento cheese. Obviously.
Ingredients
- 1/2 block cream cheese
- 1 (8-oz) block Roth’s Jalapeño Havarti cheese, grated
- 2 Tbs. mayonnaise
- 1 (2-oz) jar pimentos
- 4 Hamburger pickles (or a baby gherkin or two)
- 1 garlic clove, out of its skin
- 2 Tbs. jarred jalapeno juice
- Crackers or bread to serve on
Instructions
- Combine everything (but not the crackers or bread) in a food processor. Pulse until you reach your desired consistency! I like mine textured, but keep pulsing for a smoother feel.
- Serve on crackers or bread!
- Makes 4 sandwich servings.
