Ham, Mint and Brie Sandwiches

Sandwich night! (also known as Save Me night.)

It’s nothing novel, but I love this sandwich. Fancy enough to pass for an oh-la-la dinner, but simple enough to whip up on a Wednesday before soccer practice.

Because look at that melted brie. Sister, please.

The ham is savory and smoked, the mint earthy and bright, the fig ham sweet and seedy, and the sourdough – perfection.

The ratios of course are up to you, but I tried to get the brie pretty thin since it’s a double layer once you fold the sandwich halves together. I went light on the fig jam, but violently slather that on if your life needs it.

We’ll butter both sides and toast them (with a press if you have it!) in a wide skillet until golden brown. Maybe two minutes per side? Keep flipping until you get that nice melting inside and the outside is perfectly toasted.

It kills me how delish this is.

I’m always into sandwich dinner nights. Dinner sandwich nights. Night sandwiches at dinner. One of those.

Ham, Mint and Brie Sandwiches

Ingredients

  • 8 oz wheel of brie, cut into thin slices
  • 1/2 pound smoked deli ham
  • A few tablespoons fig jam
  • Fresh mint leaves (roughly 8)
  • Sourdough bread (as many slices as you need for sandwiches)
  • Butter

Instructions

  1. This is as simple as it gets. Spread your fig jam over each bread slice, then layer with sliced brie, ham, and a few mint leaves. Put them together and butter the bread.
  2. Toast in a wide skillet (use a press if you have one) on a low heat for about two minutes per side. Enough to get the bread nice and golden brown, and a bit of melting of the cheese. Perfect!
  3. Slice into smaller halves or devour as is.
  4. This recipe makes two halves, but make as many as you want!
