….And they’re gone. My parents just packed the car, hugged us one last time and drove away. Even at 34 years of age, I always get a little misty-eyed when they leave. I know that will never change.
Parents are great. They’re great for buying you dinner. They’re great for buying you new sheet sets for your new bed, and they’re great for reminding you how to spell “plum.” Um, It’s the EUROPEAN SPELLING MOM. “No, no it’s not dear. There’s no B in plum.” FINE, have it your way. I’ll change it. But in France they spell it with a.. “no, no they don’t dear.”
Suuuure they don’t.
Other than the panic attack that set in from that realization, we had a dandy ole time! From pulled-chicken bbq, to updating mom’s wardrobe, to patio lunches, to food coma-induced naps, to backyard refreshments, to even more food, we soaked each other up. We always do.

Pulled-Chicken BBQ Sandwiches with This Awesome Lady’s Cole Slaw:
What it took for 4:
* 2 1/2 pounds chicken (2 breasts and 6 thighs)
* 1 (8 oz) can tomato sauce
* 1 (4 oz) can diced green chiles
* 3 Tbs cider vinegar
* 2 Tbs. honey
* 1 Tbs. tomato paste
* 1 Tbs. smoked paprika
* 1 Tbs. Worcestershire sauce
* 2 tsp dry mustard
* 1 tsp chili powder
* 2 Tbs. Arthur Bryant’s bbq sauce
* pinch of salt
* 1 small onion, finely chopped
* 3 cloves garlic, minced
* 4 whole wheat hamburger buns
* PW’s slaw recipe
Combine the tomato sauce through salt in a crock pot. Add the onion and garlic and stir to combine. Add chicken and nestle into sauce. Cook for 6 hours.
Using 2 forks, shred the chicken in the pot and keep warm until ready to use.
Serve bbq with PW’s slaw and dig in!
