I have the house to myself today. Do you know what this means? I get to do yoga, deep clean, take a long walk, sit on the sofa and read my book in silence and, well, blog! (Cue angels singing.) So to get my day started, I made one of my favorite breakfast creations. It really is so simple you’ll wonder why you’re not eating it 3 times a day. Lil bit of protein, vitamins and antioxidants make up this dish. Let’s get started!
* half a sweet potato, grated
*1 egg
*1 cup spinach
*fresh nutmeg
*dash of cinnamon
*dash of cumin
*dash of garlic salt
*pepper
Toss your sweet potato into a skillet and saute in some evoo, pressing it down to get some good browning marks. Season with the garlic salt, cinnamon, cumin and freshly grated nutmeg. (to your liking) Once the potatoes are starting to get nice and brown, throw in your spinach and let wilt. Remove from skillet and plate. Put a tad more evoo (or butter, scandalous!) back in your pan and crack an egg in. Cook it however you like. This is your life, ya know. I prefer mine sunny side up. Top the hash with the egg, sprinkle with freshly ground pepper and paprika and you. are. set.
Now, this makes one serving so if you’re cooking for more, just double, triple, quadroople. Wait, that’s not right. Whatever, just make it!
