Today this happened to my poor husband: Bilateral Functional Endoscopic Sinus Surgery, Septoplasty and Turbinectomy. In short, a doctor punched him in the nose. All went well, and he should recover just fine in a few days, given the amount of pain pills his doctor gave him, the pounds of chocolate pudding I bought him and the endless online stack of Mystery Science Theatre movies our Instant Netflix supplied him. Yea, boy’s hooked up.
Given the events of the LONG day, dinner had to be quick. For me, a quick pesto pan-fried gnocchi, and for my patient, a frozen pizza. (The man is wearing a nose cast. He can eat whatever kind of junk food he pleases.)
Aww, my little mouth breather.
Pesto Pan-Fried Gnocchi:
What it took for 1 adult with her nose in tact:
* 2 cups fresh basil leaves
* 1/4th cup freshly grated parmesan cheese
* 3 garlic cloves, smashed
* 1/4th cup toasted pine nuts
* 1/3rd cup good extra virgin olive oil
* 1/2 tsp. coarse salt
* few good grinds of black pepper
* 1 cup store bought gnocchi
In a food processor, throw your basil, garlic, pinenuts, cheese, salt and pepper. Pulse a few times. Then, with the motor running, pour in the olive oil, emulsifying into a pesto. Set aside.
Cook your gnocchi according to package directions, or al dente. Drain and transfer to a skillet with some hot olive oil and let it sear for a good 3 or 4 minutes. This is really a nice step. You can skip it, but I suggest the sear!
Lastly, combine with pesto, sprinkle with a tad more cheese and join your beat up husband in some Mystery Science Theatre 3000.
