A Little Tuna Melt Never Did Hurt Nobody

Just back from Target because I had to buy a universal remote control for our dvd player. I lost it 8 months ago and we’ve never replaced it.

Seriously, what did I do with the remote? Did I accidentally mail it to any of you? Slide it into some pasta? How does one LOSE A REMOTE CONTROL?

Yep, checked under the sofa cushions.

So anyway, I’m back with a new remote (and some cute blue shoes on clearance, and of course a black tank for my collection, some vitamins and my favorite night cream) and I’m just itching to remotely control something. Any takers?

Open-Faced Tuna Melt:

What it took for 1:

* 1 whole grain english muffin, halved

* 1 can albacore tuna, drained

* 2 tsp. mayo or ranch

* 1 tsp dijon mustard

* half a celery stalk, finely diced

* pinch of Arizona Dreaming seasoning from Penzeys

* pinch of salt and pepper

* 1/4th cup shredded cheddar

* sprinkle of smoked paprika

Preheat your broiler to high.

In a small bowl, mix together tuna, ranch, mustard, celery and seasonings.

Throw the english muffin halves under the broiler for a minute so it can toast. Then top each half with the tuna mixture. Sprinkle the cheese on top. Throw it back under the broiler for another minute until the cheese melts. Sprinkle with paprika and dig in!
