As I was driving home from work tonight I made a disconcerting discovery about myself. I am so behind the times. I was listening to my favorite compact disc in my red, portable compact disc player attached to my car tape deck via adapter, when a short in the wires caused the song to bounce back and forth from speaker to speaker. Trying to maneuver the steering wheel, I fiddled with the cord, only catching bits and pieces of what Sarah McLachlan was trying to convey to me from 1995. How could this be happening? There is an important message in that song! So, this weekend I have to go to RadioShack (they do still exist, right?) and pick up another tape deck attapter thingy for my red, portable compact disc player. Don’t even try to sell me on having a cd player installed in my car. It’s a black, rusted-all-to-heck 1997 Accord. It kind of belongs with the red, portable compact disc player. And my faded jean jacket that I wore today with the elbow holes from my early 20’s. I’m really, really not kidding.
Asian Turkey Meatballs with Herbed Couscous and Shredded Carrots:
What it took for 2 adults:
* 1 lb organic ground turkey
* 3 Tbs. srircha sauce
* 3 tsp. fish sauce
* 2 tsp. brown sugar
* 2 tsp. regular sugar
* 3 scallions, finely sliced
* 1/2 cup cilantro, chopped and divided
* 1/2 cup panko
* 2 garlic cloves, minced
* 1 tsp. salt
* 2 tsp. vegetable oil
* 1 cup Israeli couscous
* 1 Tbs. butter
* 1 carrot, julienned
Preheat your oven to 450.
Cook your couscous according to package directions. When cooked, put the Tbs. of butter and 1/4th cup cilantro in and set aside. Season with salt.
In a medium bowl, combine panko, ground turkey, fish sauce, sriracha sauce, garlic, scallions, cilantro, sugar and salt. Form 12 little meatballs and place on baking sheet.
Heat oil in a medium skillet. Cook the meatballs for about 10 minutes, browning on all sides. Transfer to baking sheet and bake for 8 to 10 more minutes, until fully cooked.
Serve with couscous and carrot. Research new ways to become a part of this century. Goodnight.
