Soba Noodle Bowls with Shrimp

It’s been a while since we’ve soba’d! (<–it’s a thing.)

And this one is extra happenin’ because it’s like, a salad. Saladish. A salad bowl. It’s cold! But the shrimp is warm. So it’s complex, and we like complex.

But listen, you don’t have to rinse the soba noodles like I did. Straight from the hot water to a bowl topped with all the everything, and you’re still in a rock solid place. I just like the attitude of it cooler.

Let’s peep this.

We’ll thaw some frozen shrimp and make a little marinade, which will end up being the sauce for the whole thing. (Not to be confused with using the marinade AS the sauce. This is reserved. I told you the story about my sister serving chicken marinade as a dipping sauce, right? Didn’t I tell you?)

The marinade/sauce is a PUNGENT mix of soy sauce, sambal, sesame oil, fish sauce, lime, sesame seeds, etc. It’s insane. You’ll make the rest of your life about it.

Let’s let the shrimp sit in it for 20, then sear it in a pan. Two minutes tops, you know. Shrimp cooks quickly.

And in the meantime we cook our soba for just a few minutes, then rinse it under cool water. Combine it all in a big serving bowl and WOWZA. The most pungent, silky, salty (in a good way) noodle bowl you can remotely imagine. The sesame seeds add a finishing nuttiness, a good squeeze of lime always brightens it up. The herbs freshen even the gloomiest of days. This is SO, so good.

It’s cool and it’s warm and it’s punchy and it’s bold and it’s so much fun.

Just look at all that.

Soba Noodle Bowls with Shrimp

Ingredients

  • 12 oz large shrimp (19-23 count), thawed and peeled
  • 1 Tbs. Freshly grated ginger root
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1 Tbs. Fish sauce
  • 2 Tbs. Rice wine vinegar
  • 1 lime, zested and juiced
  • 1 Tbs. Sesame oil
  • 1 Tbs. Sambal oelek
  • 1 Tbs. Sesame seeds
  • 2-4 red snack peppers, diced
  • 4 scallions, finely sliced
  • 2 Tbs. chopped cilantro
  • 2 (3 oz) bundles soba noodles

Instructions

  1. Place the shrimp in a medium bowl and pat dry. Pour 2 Tbs. Of the soy mix over the shrimp, gently stirring to coat.
  2. Bring a large pot of water to a boil. Add the soba noodles and cook about five minutes, until they’re tender but toothy. Drain completely and rinse under cool water.
  3. Heat a medium skillet over medium high heat, and add the shrimp in a single layer. Sear on one side for one full minute, flip and sear one more. Remove from the heat immediately.
  4. In a large serving, add the cold soba noodles. Top with the remaining soy sauce mix, red peppers, scallions, cilantro and shrimp. Garnish with more sesame seeds and serve!
  5. Serves four.
