Let them eat . . . orange yogurt bundt cake!

I’m going to tell you right now, this is not my recipe. It’s STRAIGHT from the exquisite Manon’s IG reels, and I about died when I saw her post it. I’m obsessed with her beautiful videos, her calming French voice, her angles and lighting and young hands and lovely plates. She’s stunning. Worth a follow if you need your blood pressure to come down a bit. She posted this cake a while back, and the way she framed it just sold me. Mums coming over for a playdate and you have only have ten minutes to put together a cake. In a bundt pan. It’s a cozy scene that immediately played out in my head, so I had to make it for you. Consider me influenced!

I did have to scour the comments to find out what “pot” meant. One pot of this, two pots of that. Turns out, it’s a cup. So whatever she used in a pot form, I used in a cup form. Easy as pie. I mean cake.
This is filled with greek yogurt, eggs, flour, my homemade vanilla, and a bit of orange. Manon used a big orange, but I had a bunch of small ones, so I winged it. And it was fabulous.
And I couldn’t resist using my new thrifted stoneware bundt pan. These are the good things in life.

The cake is unreal. And truly, it only took about ten minutes to pull together. (if you’re not shooting a video for it.:)) About 45 minutes in the oven and you’ll have an insane bite (or 54) ahead of you.
Moist and light, tangy with a bit of citrus. And the powdered sugar just bring it to an 11.

Please make this soon. Valentine’s day! While it’s not pink or red, it’s still absurdly festive and a total treat. And it’s lovely to look at. A dopamine rush! Plus we need this orange during these winter months to keep us not stabby. Trust the bundt cake.

This weekend! It’s your duty.
Ingredients
- 1 cup greek yogurt
- 2 cups sugar
- 3 eggs
- 1 cup extra-virgin olive oil
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 pinch of salt
- 1 tsp vanilla extract (maybe a splash more)
- 1/4 cup fresh orange juice, plus about a tsp of zest
Instructions
- Preheat your oven to 350.
- In a large mixing bowl, add the yogurt, sugar and eggs. Give it a good whisk. Add the olive oil, flour, baking powder and vanilla extract. Give it a pinch of salt. Grate in some orange zest and add the fresh orange juice. Whisk until smooth.
- Lightly spray a bundt cake pan. Give it a small dusting of flour, then turn the pan over and dump out the excess.
- Add the cake batter to the bundt pan and evenly distribute.
- Bake on the middle rack for 45 minutes, or until a toothpick comes out clean. (I had to add 5 minutes, but all ovens are a little different.) Let it cool about half an hour in the pan, before gently tipping it out onto a cutting board.
- Garnish with powdered sugar and serve!
- Serves 6-8, depending of the size of slices.
