Toasted Focaccia Sandwiches with Smoked Salmon and Camembert

Think: picnic style! Because we’re there. Almost there. Like so there.

Listen, I’m not going to tell you what to do. But my vision for your life are clearly these toasted focaccia sandwiches with smoked salmon, camembert, fancy jelly and arugula. On a blanket. Outside. In a giant straw sunhat. With a crisp bottle of whatever you want.

First of all, look how simple they are. You know that’s always been my game. Simple with a side of wowza. (Do we hate wowza? How did that land? Eh?)

But there are couple of things I’d like you to know, before you rush to the store for the ingredients. Let us peepeth.

The focaccia bread. I didn’t make this. Remember when I made focaccia that one weekend last whenever it was? This isn’t that. You’re more than welcome to make your own, ya overachiever. This one is a flavored do-dad from Trader Joe’s, and it’s pretty thick. Which isn’t a bad thing, because carbs. But also, yours might be a little thinner, depending on what you buy and from where. All to say, we’re going places.

The smoked salmon – this is the thin cold kind that you pull away in layers. Like lox. Either works, so use whatever your soul fairies demand.

The jelly – this is what you’ll do. Rummage through your fridge on all the condiment shelves because we all have that RANDOM FANCY jelly in a tiny jar that we received in a gift box or the farmer’s market or a bulk warehouse sample section. It might be fig preserves, or a wine confit jelly, or something not at all like that. But it works. Because it’s sweet, and we’re pairing it with salty/savory. Go grab it!

The camembert, one of life’s greatest treasures. Brie totally works here, so whatever you see, drop it in your basket.

Because you see, you’ll slice and melt it on the focaccia, oh my word. Even if this is a far as you get in this recipe, the world is yours.

On the bottom toasted halves – the jelly. Mine is this strange pear and wine confit that I got in a French food box. It’s delish! Whatever you have will absolutely work. Slap it on.

And then we build. Smoked salmon on the jelly. Everything bagel seasoning on the salmon. Thinly sliced red onion next. Peppery arugula to top. I forgot to include the red onion in my ingredient photo up there, but I feel like it’s something we can eventually move past with minimal damage.

And here we are! This is pre-slap together, but I wanted you to see its innards, so you can fully know what you’re getting into. Doesn’t it scream picnic? Quick, go grab your sunhat and let’s find some ’90s dreamy female songs to go with it!

That warm, melted camembert over the cool salty salmon dusted in everything bagel seasoning is what dreams are made of. Especially paired with the toasted-but-still-slightly-spongy focaccia bread. And the onions and arugula around it all out. To dah for, I’m telling you.

If arugula isn’t your thing, baby spinach works. I love the pepperiness, but spinach still has a delicate, earthy bite, so don’t be afraid of that.

And ya know, I think I drizzled a good olive oil over the top. Tiny drizzle. Do that!

Press them together, tie with twine if you’re obnoxious like me, and you’re good to go. Eat them outside, or at your favorite inside home lunch spot. It all works. Even if you can’t get outside yet, you’re still a good person.

So simple, such brilliant flavors, all the picnic vibes and beyond. These honestly work for a quick dinner if you’re in a pinch! Fly, little bird.

Focaccia Sandwiches with Smoked Salmon and Camembert

Ingredients

  • 14 oz focaccia bread, sliced in half lengthwise (and once more crosswise, making four sandwiches)
  • 6 oz smoked salmon
  • 1/2 pound camembert cheese (brie works, too)
  • A few Tbs. fancy jelly or jam
  • 1/3 cup thinly sliced red onion
  • A loose cup of arugula
  • A Tbs. Everything Bagel seasoning (more or less)

Instructions

  1. Preheat your oven to 400.
  2. Arrange the camembert slices on the top halves of the focaccia bread. Place all the bread on a rimmed baking sheet and toast for ten minutes.
  3. Spread the jelly on the bottom halves of the toasted focaccia bread, then top with smoked salmon slices, a sprinkle of everything bagel seasoning, a few slices red onion, and some arugula to top. Maybe a drizzle of your best olive oil? Sure, why not.
  4. Press the top halves on and secure with twine, if you’re a dweeb like me.
  5. Makes more delicious picnic (or anytime) sandwiches!
