Night 2 of practicing “Man! I Feel Like a Woman!” for Ashlee’s karaoke birthday party Friday night. This is either going to be really awesome for me and extremely painful for the audience, or really awesome for the audience and extremely painful for me. My version is going to end up being, “Man! I Feel Really Awkward On This Stage And You Realize This Song Is Pretty Low In My Range So Don’t Mind My Grunting Noises And Oh Look Is That Janeane Garofalo Walking In The Door?”

Spelt Pasta with Garlicky Mushrooms, Spinach And Parsley:


What it took for 2:

* ½ pound spelt pasta

* 8 oz gourmet mushroom blend, rinsed and ends trimmed

* 3 garlic cloves, minced

* 2 Tbs. extra virgin olive oil

* 1 Tbs. unsalted butter

* 2 cups baby spinach

* 2 Tbs. parsley, chopped

* 1/4 chopped walnuts, toasted

* parmesan shavings, for garnish

* coarse salt and freshly ground pepper, to taste

In a large saucepan, cook pasta according to package directions, until al dente. Reserve 1/4th cup pasta water.

In a medium skillet, heat oil over medium and toss in the garlic. Sizzle and let bloom for about a minute. Add the mushrooms, season with salt and pepper and sauté until they start to brown and soften, about 4 minutes.

Add the pasta to the mushroom mixture and stir in the butter, spinach and parsley. To serve, drizzle with more olive oil, and garnish with walnuts and parmesan shavings.
