Smoked Sausage and Polenta with Parsley Pesto (Sponsored Post)

Also, I’m having babies in like five minutes. Can you believe this? It’s starting to freak my face off. It’s not that I have a TON TON left to do, because we’re basically sort of in a way kind of not really ready. I still need to pack, the car seats need to go in, I need to make some room in the freezer, and I should start sanitizing all the bottles and pacifiers and dog.

You should see how long it takes me to do anything these days. Waddle waddle here, shuffle shuffle there, here a yaw, there a gimp, everywhere a waggle waggle. Old McBevy had a paunch.

Okay this is getting ridiculous. I HAVE A POINT.

And it only takes 15 minutes. llllllllike from beginning to end. All you’re doing is slicing, sautéing, pulsing and tossing. And it tastes like angels drop kicking your tongue over and over and over.

It’s seriously the simplest of ingredients, with Hillshire Farm smoked sausage, some diced red bells, a tube of polenta, and some quickidy dickidy dock parsley pesto. I mean, you know how obsessed I am with polenta and sausage together. There’s something about the creamy corny. . .ness of polenta and the smoked sausage-y. . . ness that makes me lose my frickin’ mind.

AAAND I didn’t cry and/or complain and/or try to murder anyone while making this.

Smoked Sausage and Polenta with Parsley Pesto:

What it took for 4:

* 1 Tbs. extra-virgin olive oil
* 1 (14 oz) package Hillshire Farm smoked sausage, cut into 1/4-inch slices
* 1 large red bell pepper, diced
* 1 (18 oz) tube pre-made polenta (flavor is your choice), cut into 1/2-inch slices
* 2 cups parsley leaves
* 3 cloves garlic
* 1/3 cup freshly grated parmesan cheese
* 1/4 cup extra-virgin olive oil
* salt and pepper to taste

Heat the Tbs. of oil in a large skillet over medium-high. Add the sliced sausage and diced red bell pepper. Sauté for 5 minutes, then remove from skillet.

To the skillet, add the polenta slices (and a little more oil if needed). Sauté each side for 2 minutes, until golden brown.

In the meantime, combine the parsley, garlic, parmesan and a pinch of salt and pepper in a large food processor. Pulse to blend into a pesto.

Toss pesto with polenta, sausage and peppers. Serve your face immediately!

    I buy this sausage almost weekly! I saute it and toss it with lentils in a walnut-shallot vinaigrette. It's so French of me! And I'm not French! I love it :)
