Pizza Helps Snow Melt, Right?

Isn’t the old saying, “Every time a pizza is eaten, a snowman takes a beatin’?”

Oh Wow, that’s pretty dark.

As in Guy Noir dark. As in Kill Bill dark.

As in cover your kids’ ears and hide them from me forever dark.

…Who am I?

I’ll tell you what I am – I am over. this. snow.

But my attitude is in JUST the right place!

Pizza with Bacon and Mushrooms:

What it took for 2 pizzas:

* 1 (16 oz) store bought frozen pizza dough, thawed and cut in half
* 1 (8 oz) package baby bella mushrooms, rinsed and sliced
* 4 slices bacon, cut in 1 inch pieces
* 1 (12 oz) jar roasted red peppers
* 1 cup fresh mozzarella

Preheat the oven to 400, with a pizza stone inside.

In a food processor, pour the jar of roasted red peppers (oil and all) in and pulse, making a sauce. Pour into small saucepan and heat over medium low to keep warm.

In a medium skillet, cook the bacon for about 7 or 8 minutes, until crispy and done. Remove bacon from pan and set aside between 2 paper towels to drain the fat and to cool. Drain most of the bacon fat, leaving about 1 Tbs. in the pan. Heat the pan over medium and add the mushrooms. We’re only going to partially cook them in the pan so that they don’t mush up in the oven.  Saute for about 2 minutes. Remove from pan.

Roll out the dough on a floured surface to your desired thinness. Prick all over with a fork and throw it in the oven for 2 minutes. Bring it out and spoon some red bell pepper sauce over each crust. Top with mushrooms and bacon bits. Dollop some mozzarella over the top. Resist from taking a bite. That’s raw dough you know. Slide the pizza back onto the stone and bake at 400 for about 20 minutes, but start checking at the 15-minute mark.

Let cool for a minute, top with freshly grated parmesan and maybe even some fresh basil. Slice it up and enjoy some dinner! Check to see if any snow melted.
