I know how you like being screamed at first thing in the morning.

Listen! This dip, you guys. This DIP. We have to talk about it. Well, I’ll talk about it to you. I can’t see straight. Let me slow down.

I hosted a little play date this week for some of our fave gremlin buds, so I wanted to have a simple snack on hand for all the other little hands. I know you’re like, “Brie and artichoke hearts? For kids? Bev, are you ill?”

I’m not ill. I’m dippy and giddy and borderline loony. That’s what I am.

And the kids inhaled it. HA-BOOM.

It’s stupid simple to make – a wheel of brie, a small jar of grilled artichoke hearts, a small thing of Greek yogurt, a single garlic clove, a handful of garden scallions, and a tiny skillet. (and your soul)

This gets lightly stirred together, carefully packed in the skillet, and baked until all glory breaks loose.

Which is only like, ten minutes.

I am not kidding you right now with this ^^^. Nor will I shut any door. Especially your front one.

The TASTE is unreal. The yogurt adds a subtle but pleasing tang. The brie add that fabulous chalky, creamy flavor. The artichoke hearts have that undeniable piquancy that makes you weep like a newborn.

You know who you are.

We basically freaked out the entire time we ate this. It was one of those, “Let’s cross our fingers and see if this combo works!”- kind of deal. And it worked. HAVE MERCY DID IT WORK.

It’s a straight luxurious dip! And I will say, if you don’t have little hungry faces all, “Maaaaawm, when are we eaaatinggggg” – you can take one moment more and sprinkle a little lemon zest and finely diced scallions on top. This would be a good decision for your life.

In short, this is unbelievable and your face needs it pronto. Summer picnics, play dates, afternoon delight (<–I hear it now), girl’s night snack with rosé, party appetizer, dinner party starter, Memorial Day side dish – just get her done.

Ingredients

  • 1 (6.7 oz) jar grilled artichoke hearts, drained
  • 1 (6 oz) container Greek yogurt
  • 1 garlic clove, minced
  • 1/4 cup finely diced scallions
  • 1 (8 oz) wheel brie, cut into small chunks (you might not need the entire wheel. I used 3/4th of the wheel and gave the rest of the cheese to hungry kids. but if you can get all of the brie in, great!)
  • 1 tsp (or more!) lemon zest, for garnish *optional

Instructions

  1. Preheat your oven to 375.
  2. In a bowl, stir together the artichoke hearts, Greek yogurt, minced garlic and scallions.
  3. Layer a few of the brie chunks in the bottom of a 6-inch skillet, then spoon the dip over the brie. Then tuck as much of the remaining brie as you can into the filling.
  4. Bake for 10 to 15 minutes, or until the cheese is nearly bubbling over and you've lost feeling in your face.
  5. Serve with your favorite crackers or crusty bread!
  6. Serves 4-ish. (or one?)

      Has anyone every tried it with a flavored Greek yogurt? I have 4 on hand Black cherry, blueberry, peach, and strawberry....or should I go buy plain?

    I don't know why I was so skeptical of this recipe, it came out amazing and didn't require a lot of effort to make. I could easily make a few of these for a dinner party. Thanks for sharing!
