You know the cord that attaches the camera to the computer so you can dump photos? Lost it. And it’s MAKING ME CRAZY. I use it almost every single day. It’s always in one spot! And now it’s completely gone. Vanished. Disappeared. This has twins written all over it.

Sorry I said dump.

Anyway, it’s a good thing I remembered to snap a few with my phone or else we’d be blog postless today. And lawdy Lou, that’d be bad newsy Sue! (no idea)

Now, if you follow me on Snapchat (I SWEAR I’ll stop saying these words someday), you might remember that Paula Deen’s third cousin, twice removed stopped by again to make these pancakes for my kids. You guys, I can barely take that woman. She’s super flirty with Aaron, makes a complete mess of my kitchen, and doesn’t even bring booze! This ain’t right.

Well anyway, remember how my brother-in-law Matt came to visit from Japan? While he was here, he made us these craaaaaaazy simple banana pancakes. Listen though, he only used one egg and one banana. THAT WAS IT. And I mean, it worked, sure, but you know me and my trollish ways. I had to make things more complicated. So I added ricotta and vanilla!

Don’t get excited yet.

I thouuuuught I could get away with keeping them gluten free. But my first attempt, once in the skillet, was a complete yuck disaster. Way too runny. Way too wet. Way too gluten free.

So I added a little bit of flour and baking powder! And remembered that gluten is my favorite food group.

Now you can get excited.

Since I’m (I mean, Paula Deen’s third cousin, twice removed) not exactly a seasoned baker, I winged it (wang it? oh, ew no) until they tasted right. There’s no sugar at all in it, but the banana flavor pulls some delicate sweetness into it, without slapping your face completely off.

Not to mention, the simple factor be booombtastic. I’m so mad at myself for typing that just now.

Three things:

  1. insano easy
  2. insano fast
  3. insano yummy

Now to find that stupid camera cord.

Get in that stack.

Simple Banana Ricotta Pancakes:

What it took for eight-ish pancakes:
* 1/2 cup all-purpose flour
* 1 tsp baking powder
* 1 pinch of salt
* 2 eggs
* 2 bananas
* 1/2 cup ricotta cheese
* 1 tsp vanilla
* a few Tbs. oil for pan frying

In a medium bowl, whisk together the flour, baking powder and salt.

In another bowl, combine the eggs, bananas, ricotta cheese and vanilla. Mash until everything is as smooth as you can get it. If you need to whisk it at the end, that’s fine.

Add the banana mix to the flour mixture and mix until smooth.

Heat a Tbs. of oil (or butter!) to a large skillet or griddle pan over medium. Ladle out 1/3 cup of the pancake batter to the pan, one or two at a time, grilling until each pancake is golden brown on both sides, two-three minutes for each one. Keep adding more oil to the pan as needed, as you cook the rest of the pancakes.

Serve with maple syrup, a little bit of powdered sugar and freshly sliced bananas!

    I'm going crazy over how simple these sound!! Also, lawdy Lou, that’d be bad newsy Sue! ... I'm pretty much peeing my pants hahaha so funny... aaaaannnnd ahhh loosing that stupid camera cord is a daily occurrence in my house - and I don't even have kids!!

    Yummmmmmm! And on that dang missing camera cord - computers these days (assuming you're not using some prehistoric desktop from the yeeeeeeaaaaaar 2000) often have a slot for your SD card, so you can just pop it out of the camera and right into the computer to save pics, no need for the cord. Word of caution, you will then freak out when you turn your camera back on and it says "no SD card inserted" and think you've lost EVERYTHING...and then remember the card is still sitting in the computer. :) Hope that helps!

      I even tried that yesterday! Put it in, and nothing pulled up. Ugh! Buuuut I just bought a new card reader, so we alls goods. :)

    HAHAHA! I used to always lose the cord to attach the camera to my laptop... and then I got a computer with a card reader and it changed my life. Seriously, next computer... get it. :-) Ok, so now... these pancakes. I mean, damn girl. Now, what do you think I need to do to get Eric to make these for me? ;-)

    I've tried gf pancakes with just banana and egg, and yep it was a mess. Bottom line, flour belongs in pancakes. Big weekend pancaker here, will have to try this recipe!

    thank you for showing love to my beloved, yet neglected ricotta - I DO NOT understand how people don't love this damn cheese!!! also, check your fridge for the camera cord - I legit find EVERYTHING (apt keys, tv remote, my dignity) in the freakin' fridge.

    These sound amazing and the perfect use for homemade ricotta. If you've never experienced it, you must make some TODAY. Hubs and I attended a cheese making class (yes, husband of the year) a couple weeks ago and I had NO idea how easy is to make. Not to mention how much (like infinitely) better it is than store bought. 1 gallon of whole milk 1/2 cup cream Salt Citric Acid (Amazon) That's it. You cook it on the stove, then put a cover on it and let it sit for a bit. Strain it and you have the most delicious ricotta cheese you've ever tasted.

        I had a feeling it would be right up your alley! Sadly, I didn't find your blog until post-2012...I need to spend some time in the archives - this is one of my favorites! Your recipe is a bit different and doesn't call for ordering obscure cheese citric acid on the interewebs. I'll have to give it a try! I made stuffed shells with my batch and they were to.die.for. (yes, wife of the year)

    Hope you found that cord by now. My kids hide shit from me all the time, bastards (no really I love them). :) These pancakes should make everything better though.

    For the basic egg/banana pancake, I've learned to cook the first side on the stove, then stick the whole pan in the oven under the broiler for a few minutes. Then you don't have to flip it & prevents the runny mess!
