Mini Chicken Parmesan Meatloaf Cupcakes {Tablespoon Tuesdays}

Oh hey guess what! There’s snow in the forecast! WAAAAAAAAAAH.

Normally I’m a very chipper to the dipper kind of gal, full of giggles and grins, bustin’ a trick at every turn. But given our current weather situation with the potential of white fluffy buckets of malarky due to fall from the sky at any moment, I’m pretty much filled with the devil’s nectar.

Now if the snow passes and it stays rainy, then just forget we ever talked. There’s nothing to see here, folks. (I know that makes no sense. I’ve just always wanted to say it. It felt good!)

In the meantime, who wants to set up mouth-camp inside that gooey cheese, aaaaah mean right? Just nestle on in. Cuddle city. Wrap it around your bare shoulders like an afghan from grandma’s couch. Just chimpidy chomp on it like a dang feral kitty gone loco.

Mini Chicken Parmesan Meatloaf Cupcakes, my fellow compadres. May the cheese-filled centers of meatloaf cupcake force be with you and your mouths and stomachs.

    Normally not a fan of meatloaf but there's cheese oozing out of these so they have to be good! As for snow, I cannot imagine getting any at this point. We've already been in the 70s and 80s for too long.

    I can't say that I've ever eaten meatloaf, but when something has that much cheese pouring out of it I am totally game to try anything!

    My kids? I'm the one who lost my mind. Wowzers. Those cupcakes are the most amazing thing I've ever seen. Would it be weird to make a batch of them just formyself, right now, even though nobody but me is home???

    You have not seen snow until you see where I live! Bev, we just got over a foot in CO. It is awful! The power even went out this morning!! The snow needs to stop! I need these cheesy delicious muffin things to make me feel all warm and cozy! Especially, since I am posting cold ice cream recipes!
