Shall I continue the rhyme? Because I know you like it so. Eh, I guess I won’t today. I’ll just get straight to the-EEEVERYWHERE that Bev’rly went, Bev’rly went, Bev’rly went. Everywhere that Bev’rly went the gyro was sure to go.
Whoa. Pardon me. Something these things happen and I can’t control them. Embarrassing! Anyway, so these are absolutely delic-IT WAAALKED into my mouth one day, mouth one day, mouth one day. It walked into my mouth one day, which wasn’t against the rules.
I am so sorry, you guys. Wowza. Let me try and focus here. So what you’ll do is brown some lovely lamb meatb-IT MAAAADE my mouth hole laugh and play, laugh and play, laugh and play. It made my mouth hole laugh and play, to see the gyro drool.
Okay this is starting to get ridiculous. I’m honestly doing all I can here. Okay, let’s just talk about the pita bre-AND SOOO I tried to swallow it whole, swallow it whole, swallow it whole. And so I tried to swallow it whole, but still it lingered near.
Uuuuuugh. This is just bad. I don’t even know what to say right now. Maybe if I tell you about the yogu- “WHY DOOOOES the gyro love Bev’rly so? Love Bev’rly so? Love Bev’rly so? Why does the gyro love Bev’rly so?” My eager face doth cry.
I freaking give up. I surrender. Holding up my white fla- “WHY, BEEEEV’RLY loves the lamb gyro, lamb gyro, lamb gyro. Why, Bev’rly loves the lamb gyro.” My soul hole did reply.
So there’s that.
Simple Lamb Meatball Gyros:
(adapted from an old Real Simple)
What it took for 4:
* 1 pound ground lamb
* 1/4 cup golden raisins
* 1/2 tsp ground cinnamon
* 1 whole grain English muffin, pulsed in a food processor until you have breadcrumbs
* 1 egg, lighten beaten
* 4 scallions, thinly sliced, divided
* 4 pita breads
* 1/2 cup Greek yogurt
* fresh mint leaves, for garnish
* 1/4 cup freshly chopped tomatoes, for garnish
* 1 lime, for spritzing
* coarse salt and freshly ground pepper
Preheat oven to 400.
In a large bowl combine the lamb, raisins, cinnamon, breadcrumbs, egg, 3/4 of the scallions, and a good pinch of salt and pepper. Using your hands, form little balls about the size of a golf ball. Place them on a rimmed baking sheet lined with foil.
Stick them in the oven and bake for about 20 minutes, rotating the balls every few minutes so they brown evenly on all sides.
Heat the pita bread in the microwave until soft and pliable.
Place 3 to 5 ball on each pita bread. Dollop with a little yogurt and garnish with remaining scallions and tomatoes. Give a good spritz of lime and dig in!

They’re just from the store! The brand is Toufayan, and they’re the “low carb” version. I dig ‘em!

I used to mispronounce these and call them “Jii-rows” until I went to a Greek place and they gave me a confused look when I tried ordering!
Oh and also, did you mean 1 pound ground lamb instead of 1 lamb ground lamb? I could be wrong but that would be a whole lot of lamb! Guess it would make good for leftovers, though. =)
