Poached Egg Bruschetta and Greek Yogurt Chicken Salad

Get labored!

Actually, don’t. I know it’s labor day, but I think the hidden meaning behind it is, “dooo noooothing todaaaaay.” And by nothing, I’m pretty sure it excludes the following:

* drinking lots of hot coffee.

* finishing Fifty Shades of MY EYES. MY EEEEYES.

* flipping through the pages of the 45 trillion magazines at the end of the couch that may or may not piss off your husband every other hour when he accidentally knocks them over.

* making a velvety river of breakfast with this uuunbelievable Poached Egg Bruschetta thingy.

* taking a long walk through the neighborhood with your pup, kicking the crispy leaves on the sidewalk as you go.

* making up and loudly singing a song about kicking said crispy leaves and annoying the tar out of the local neighborhood folk.

* contemplating washing your hair, and quickly deciding against it.

* throwing together this super light and deeeelishush Greek Yogurt Chicken Salad for lunch or dinner or mid-day snack or probably now.

* napping.

* watching a movie mid-afternoon. or a forensics marathon! (my family just rolled every single one of their eyes)

* swatting flies and frying okra like they do in the south.

* THE FLIES IN MY HOUSE ARE SO EVIL. But I don’t waaaaaanna close the dooooooraaaa.

* oh, the okra thing? it’s RED okra, dudes. mmmm. i’ll show you later today on the ‘gram, after I accidentally burn my house down.

    Yes! to all of those things. Holidays are pretty much the only time I eat anything other than cereal or oatmeal for breakfast. Such a treat. This morning we enjoyed some homemade berry rolls but then discovered, in our euphoric belly-full-of-warm-dough state, that our pup managed to consume the last eight of them. Not. cool. But hey, it's Labor Day...guess he might as well enjoy it too!

    Doing nothing today sounds about right. I skipped my workout and Jason and I are getting ready to stuff our faces at an amazing sandwich shop. As for the bruschetta and chicken salad - I seriously need to make those ASAP. Have a great holiday, Bev!

    I actually did wash my hair today, then let it air dry while I sat around. Did I tell you how much I love a runny poached egg? Mmm... And with asparagus, even better.

    Well, I did labor today in the kitchen, but it's not acutally laboring because I love it, as I'm sure you do too! I can so relate to the magazines/books at the end of the sofa!! That is so me and my husband has his recliner and I have the sofa, so my little rat pack corner of the sofa is all mine! :) I heart poached eggs!

    My hubby and I just saw a meal with poached egg last night on tv and it made me want to try something - and this recipe sounds just like the right one to start with!
