Raw Zucchini “Pasta” and Roasted Vegetables Au Gratin

Oh hey! I survived the lighthouse.

You guys, it was seriously 214 steps high into the heavens of angel territory. Narrow little see-through steps. Uuuuuup.chuck.

I was wearing a long skirt and it was whipping around my ankles, so I absolutely freaked out thinking it was going to tangle up in my legs and cause me to lose my balance and fall down the haunted death shaft of the spiral staircase. So, I tied my skirt together in a little ball and it reminded me of when I would do that in my early teenage years with my church camp t-shirts with a plastic clip thingy and then I missed the ’80s.

So basically I could win Fear Factor by now. Shark attacks, alligator assaults, nose-diving in lighthouse towers. I’d say I’m like, survival of the fittest material. If constant screaming, panic attacks and wayward hyperventilating is allowed, that is.

So I’m headed back to the Midwest today (have we had rain!? is my garden kaput? wait did I lock my car? crap.) but I’ll leave with you a couple of recipes that couldn’t be more different from each other. Like me and adventure. Ugh.

    I was trying to channel your kitchen creativity last night as I perused my cupboards. Biscuit dough, black beans, frozen shrimp and tons of peppers were calling out to me. What did I end up making? Frozen potstickers from Costco, womp womp.

    Zucchini ribbons are the best. And I like how you fancied up a box recipe. Vegetables make it healthier right?? (don't answer that)
