Cheesy Black Quinoa Bites and Garlic Chicken Spring Rolls

I know, I know. It’s Saturday. What gives?

I just feel like it’s taken me all flippin’ week to get my groove back, STELLA. And I just found out that Click and Clack from Car Talk are retiring and I just don’t rightly know how to handle this unexpected hurdle in life. Don’t they understand that their laughter is the FUEL in my BLOOD that allows me to face each day? Ugh.

Before I go sit and stare at a blank wall for hours processing this unbearable news, I need to show you what I had going on over at the Tablespoons this week.

Okay, wait! Before I go on, let me just say that my rolling skills are hee-lar-ious. I’m no professional. I’ve made these things multiple times and for some reason when it comes to rolling them I have like two left hands or something. It’s sad. Just love me.

    Sooooo bummed about Click and Clack! Although I had no idea the oldest brother was 75...maybe he deserves I don't know...to retire or something. :) These look great! LOVE me some spring rolls!!

    Ohhh yes! So every store around here was out of black quinoa for months, but then one just got it back. And maybe I stocked up with embarrassing amounts of it... like the get-your-husband-to-buy-some-too-in-a-different-check-out-line kind of embarrassing.

    Over Memorial Day weekend, my boyfriend's Filipino step mom taught me how to make lumpia... Dear lord was it nerve wracking trying to roll those bad boys up successfully while trying to impress the step mom!! PLUS, the lumpia wrappers are easier to deal with than the ones you use for these spring rolls.... I'm not touchin those with a 10 foot pole! At least, not when the Asian step mom is around ;P

    Love spring rolls, but I have never made them. The next time I am in Kansas, you do not mind if I come over for some cooking lessons...do you?
