Pan-Seared Salmon For One

I don’t WANT to annoy the living tar out of you. I don’t.

So let me just get this teeny tiny thing out of the way real quick before we begin, cool?

Just bear with me.

…..sweet Lordy Lou almighty beans of the earth he diddly done won it.

Not that this was a shocker, I mean come on. Did you hear him sing Home two nights ago? Ugh, I just wanna stick him in my black tank top. WHAT. Okay, I’m done. Forever. Maybe. But probably not.

SALMON FOR ONE.

And nooo, I didn’t DRIVE AARON AWAY with too much PP talk. That will be later this summer. It just happened to be one of those nights where he had a work dinner and I had clean hair, so I found myself at the fresh fish counter and butter on the brain. Speaking of fresh fish counter, can I tell you something? I’m embarrassed already. Here goes:

I usually just buy frozen fish.

Was that the sound of you deleting me from your life?

I know. I’m a ridiculous excuse of a human being. (I almost typed bean, which I kind of like actually) But normally I’m not planning on cooking the fish THAT DAY, so I just buy it flash frozen. But let.me.tell.you.whut.sisters.and.brothers. I bought it fresh this time around and it was like FIELD TRIP day for me. I poked it. I prodded. I made it jiggle. I probably shouldn’t say anymore.

Clean hair makes you do strange things.

 

Sizzle, sear, wilt, flip, squeeze, wilt, season, sear, sizzle, drizzle, twizzle.

Twizzle?

 

Fresh fish makes you say weird things.

Or perhaps my ponytail is a little too tight.

You better get on this before I start talking about Phillip again!

 Pan-Seared Salmon For One:

What it took for One:

* 1 Tbs. butter
* 2 tsp extra-virgin olive oil, divided
* 1 cup red and yellow cherry (or grape) tomatoes, some halved, some left whole
* 1 fresh salmon fillet
* 1 Tbs. fresh herbs (I used thyme and oregano)
* 1 tsp capers
* juice from half a lemon
* coarse salt and freshly ground pepper

Melt the butter and 1 tsp oil in a cast iron skillet. Once the foaming starts to subside,  add the tomatoes and cook for about a minute. Add the salmon fillet, season with salt and pepper and sear on one side for 3 minutes. Carefully flip with a fish spatula and sear another 2 to the 3 minutes. Add the herbs and toss the tomatoes around a bit. They’ll be getting some nice browned marks by now and breaking down a tad.

In the meantime, heat the remaining tsp oil in another small skillet. Add the spinach and wilt, 2 minutes. Toss in a pinch of salt and pepper.

Serve salmon and tomatoes over the wilted spinach and garnish with the capers and a HUGE squeeze of lemon. You don’t even k.n.o.w.

*obvs if you want to make this for your date or family or whatevs, just double or triple ze recipe!

    That's my dinner- totally- love the dinner for 1 thing. And I love salmon, but I'd never buy frozen!! I know I'm supposed to be a "Jessica" fan since she's from San Diego and all... and the girl has a nice voice... but would you really buy her album? Nope- glad Phillip won.

    Had your Smoked Paprika pasta sauce with Angel Hair and Grilled Shrimp last night....lovely! As for your boy P.P.. Guess I'm too old, although not THAT old, but I just don't get it. Based on his win, Casey should have won last year. All I hear is Gr-r-r-r-r-r-r-r-r-r when they sing.....oh well...

        If your a freak than what am I? I am the one with the phillowcase. My husband travels alot..... Anywho...one of these days I'm going to make one of these fabulous recipes. Once I can drag myself away from HOME. Because my nightly meals have been too similar to staring at the bottom of a cereal box. :)

    As much as I've tried to find somewhere with good fresh fish here, I've ALWAYS had better luck with flash frozen. So I'm totally down with the frozen fish. In fact, I just happen to have one salmon fillet in my freezer right now. And this would be perfect.

    This looks amazing!! And, I know that I am a 13 year old at heart. But last night truly was the single best moment in American Idol history...in my very humble opinion. I love it when good things happen to good people. The fact that all he wanted to do was cry and hug his parents was just perfectly him.

    I make salmon at least 2x a week thanks to a cheap little fresh fish place by me and am usually happy with my easy, throw it in the oven kinda thing. Now, there's no way this isn't happening next time around. And those tomatoes! Omg the tomatoes. I would eat a pint of them all roasty like that :)

    Loving this recipe! My husband is not a huge salmon eater so I am usually cooking it just for myself while he is grilling himself up a big old steak since I'm not a big steak eater. This dish will be sizzling in my skillet very soon!

    I have one frozen salmon fillet in my freezer and I've been meaning to learn how to cook fish well, so this is happening asap. That last picture, by the way, belongs in a cookbook. Also, clean hair makes me do crazy things, too. Fortunately my hair is not clean today so there will be no craziness. I'll be hermiting all day, as usual!

    I buy frozen salmon all the time from Costco or Sams Club. Once in a while i buy fresh salmon from Whole Foods. Their fish is excellent bùt pricey.

    The salmon recipe is great. Use fresh. If you're going to dear the salmon, ; use a mix of olive oil and butter. Otherwise you'll have burned butter which isn't good. I used about onec tsp of rosemary. Next time I would use more. I made it for myself only. Enjoy

    I made this for my husband and I and it was delicious. You left out spinach in the ingredients, but it was easy to figure out by the picture and the fact that you put it in the explanation of how to cook it. I used the microwave already cooked spinach bag which is cheating but it is just as good as cooking it fresh. Not only did it look good when I presented it, but it was delicious to boot. Good recipe.
