Alright, there’s just no eloquent way of saying this. There was a cockroach in my yoga pants this morning. And get this, I didn’t even notice until 10 minutes into wearing them that it was paying rent for a space on my thigh. If this isn’t a sure sign that I need a break, I don’t know what is.

Grilled Chicken Ceasar Salad:


What it took for 2:

* 2 chicken breasts, scored with a fork
* 1 cup Newman’s Own Ceasar dressing, divided
* 2 garlic cloves, minced
* 1 Tbs. Dijon mustard
* 1 head romaine, rinsed and cut into 1 inch ribbons
* 2 slices whole grain bread
* parmesan shavings
* coarse salt and freshly ground pepper

I like to marinate my chicken the morning of, so this is what I do. In a large plastic ziplock bag, place the chicken, ½ cup ceasar dressing, garlic and Dijon mustard. Coat the chicken well and marinate in the fridge up to a day.

When it’s time to eat, get your husband to grill the chicken for you. It’s cold out.

While he’s grilling, cut the sandwich bread into little crouton shapes, sprinkle with garlic salt and slightly drizzle with olive oil and toast them up good.

Once the chicken is cooked, let it rest about 10 minutes. Slice it all pretty like.

To serve, top the romaine ribbons with sliced chicken, croutons, the rest of the dressing and parmesan shavings. Season to your liking.
